Preparaton : pre-heat the oven (180C - th.6). Roll out the pastry and place in a butered and foured pastry case. Prick with a fork and bake for 10 mins. Let the pastry cool down. Spread mustard on the pastry and scater the grated cheese on top. Peel the carrots, wash the courgetes then slice thinly lengthways with a vegetable peeler. Slice the ham into strips of similar width. Place a tghtly-rolled carrot or courgete in the middle then develop the fower from the centre outwards, alternatng the slices of vegetables and ham. Brush the vegetables with oil then add salt and pepper. Place in the oven and bake for 30 to 40 mins untl the vegetables are cooked and the pastry is light brown..
