We source top quality fruit and make all our wines ourselves in the cellars of two local vignerons. Over time we are making very strong relationships with our growers - the quality of our fruit is determined by working only with growers who care about the health and quality of their vineyards and who are producing exceptional grapes. Our wine making is very simple – high quality fruit, strict and careful sorting, then a natural ferment and maceration for up to four weeks and the wines left on lees for 14 months before bottling. We use a combination of new and used oak for the wine élevage, depending on the appellation and year. We do not rack the wine other than at the bottling stage. We use high grade natural cork for all the wines except the Bourgogne Pinot Noir and Bourgogne Chardonnay. In these cases we use Diam corks. Par Mark Haisma Burgundy Rhone 2009 En Primeur Chambertin-Clos de Bèze, Grand Cru Les Bonnes Mares, Grand Cru Morey Saint Denis, ‘La Riotte’, Premier Cru Gevrey Chambertin, ‘Croix des Champs’ Saint Romain, ‘Le Jarron’ Bourgogne, Pinot Noir Bourgogne, Chardonnay Cornas, ‘Les Combes’ 2008 Morey Saint Denis, ‘La Riotte’ Premier Cru Gevrey Chambertin Bourgogne, Pinot Noir Champagne Leclaire Champagne The Leclaire vineyards have been family owned since 1878 and now cover six hectares of Grand Cru and Premier Cru including the villages of D’Avize, Cramant, Oger and Grauve, all found on the Côte de Blanc renowned for its Chardonnay. The domaine only makes its wine from the Grand Cru sites except for the rosé. Saint Apolline, Grand Cru, Blanc de Blanc Aged for three years from the 2006-2007 vintage. From the villages of D’Avize and Cramant. Carte D’Or, Grand Cru, Blanc de Blanc Aged for five years mainly from the 2005 vintage from the villages of D’Avize, Cramant and Oger. Rosé, Premier Cru 88% Chardonnay and 12% Pinot Noir from the 2006 vintage. Domaine Roland Schmitt Alsace Founding his domaine in 1983, Roland Schmitt was one of the new generation to breathe life back into the region after the second world war. The domaine is now run by Anne Marie, his wife, and her two sons. They have now been granted biodynamic certification. The wines are of great purity and minerality. They are lovely, clean, bright wines made very simply. They are aged in tank and undergo full malolactic fermentation. 2009 Reisling, Altenberg, Grand Cru Pinot Gris, Altenberg, Grand Cru 2008 Reisling, Thalberg Domaine Pierre Naigeon Burgundy Five generations of the Naigeon family have been looking after these vines. Pierre took over in 2001 and has built up his holdings to ten hectares, from Grand Cru to Bourgogne. I make my Burgundies at his domaine. We have secured a small allocation of his mature wines which are ready for drinking. 2002 Les Bonnes Mares, Grand Cru 2003 Gevrey Chambertin, ‘Bel-Air’ Premier Cru Fixin, ‘Les Hervelets’ Premier Cru Marc Plantagenêt Burgundy Marc makes wines only in the great years - his first was 2005, the next was 2009. His reason for making such a cuvée was to offer his customers a high end, generic Bourgogne appellation. He sources from at least three different vineyards to create the blend that reflects his thoughts on the particular vintage. Marc’s methods are informed by historic blending practices. In the Middle Ages, the wines from Burgundy were named ‘Vin de Nuits’ and ‘Vin de Beaune’ as they were produced by blending different wines from the best villages in those areas. 2005 Bourgogne Pinot Noir, ‘Nobles Origines’ Pommard A.O.C., Santenay A.O.C. and Côte de Nuits Villages A.O.C Bourgogne Chardonnay, ‘Nobles Origines’ Meursault A.O.C., Saint-Romain A.O.C. and Hautes-Côtes de Nuits A.O.C. Domaine Vincent Paris Cornas Saint Joseph An expression of Cornas and Saint Joseph so pure that you can almost taste the granite soil in which he grows his vines. These wines are bright and fresh, young but capable of lovely development. We make our Rhone wines at his domaine, again sourcing fruit from local growers who are meticulous in their vineyards. His winemaking reflects the great care he puts into his terrior, his attention to detail. The vinification and élevage are not unnecessarily complex. The fruit is 100% destemmed and a long natural ferment is followed by 12 months in oak then to bottle in spring the year following vintage. My allocations are very small but come direct from the domaine.
