S ince April, Paolo Sari has been in charge of the four restaurants in the MonteCarlo SBM's Relais & Châteaux hotel, including the gourmet restaurant Elsa. Under the chef's Mediterranean influence, this is now the very embodiment of the cuisine of the French and Italian Rivieras. From his international career Paolo Sari has retained an expansive vision of cuisine as a blending of the colours and flavours of exceptional produce. At the Monte-Carlo Beach, he recreates the perfect balance between the ingredients, the recipe, the habits of his clientele and the history of the place itself, using simple produce that he reveals in all its finery, such as Provençal vegetables, fresh fish and sensational seasonal fruits. Classics are given a new twist, as in the ratatouille that he will be interpreting in a different way each season. Heading a staff of 60, helped by his second-in-command, Michel Lions, he strives to offer gourmet diners all the freshness of southern France. He has even designed a new breakfast menu which is quite a meal in itself. In keeping with the "homemade" tradition, breakfast at the Monte-Carlo Beach centres around a large selection of breads and pastries, accompanied by compotes, preserved fruit and jams in pretty glass jars, along with pieces of fresh fruit displayed in delightful little crates as at market. There are also some unusual touches, such as fresh honey served on the comb straight from the hive. De son parcours international, Paolo Sari a conservé une vision multiple de la cuisine, mélange de couleurs et de saveurs issues de produits d’exception. Pour le Monte-Carlo Beach, il rétablit l’équilibre parfait entre les ingrédients, le plat, les habitudes de la clientèle et l’histoire des lieux, au travers de produits simples auxquels il redonne leur noblesse, tels les légumes de Provence, le poisson frais et les fruits de saison magnifiés. Des classiques réinterprétés comme la ratatouille qu’il interprétera chaque année d’une façon différente. À la tête d’une brigade de soixante personnes, avec l’appui de son second, Michel Lions, il a à cœur d’offrir aux clients gastronomes toute la fraîcheur du Sud de la France. Et ce notamment à travers la mise en place d’une nouvelle formule de petitdéjeuner qui se doit d’être considéré comme un véritable repas. Dans l’esprit du « fait maison », la proposition du Monte-Carlo Beach sera construite autour d’une grande sélection de pains et de viennoiseries, accompagnée de compotes, fruits marinés et confitures présentées en de jolis pots de verre ainsi que de morceaux de fruits frais alignés dans de ravissantes cagettes, comme au marché, mais aussi d’éléments inattendus, comme ce miel frais présenté directement sur le cadre sorti de la ruche.
