Chef Carlton Melbourne Carlton Melbourne Chef Carlton Melbourne is the founder of Island Spiced Foods and chef/owner of Island Grill Caribbean Restaurant in Ottawa. After accumulating over 20 years of international culinary experience, Chef Melbourne settled here and worked in the city’s best restaurants before striking out on his own. As a boy growing up in Jamaica, Chef Carlton was introduced to hot sauces and spicy food at an early age. Having become an avid hot sauce consumer, he, one day, ran out of his commercially made sauce and decided to make a batch of his own. He shared it with family and friends, the feedback was tremendous and his passion for the flavours and ingredients of the islands was born. Chef Carlton is an expert in making the incredible sauces and spice rubs which are used at his restaurant, where he prides himself on his attention to detail and top-notch customer service. f.y.i.
