Ce sont des molécules obtenues par la transformation de l’acide alginique, polymère naturel de la paroi cellulaire des algues brunes, sous la forme de sels de sodium ou de potassium. En présence d’ions calcium, les chaînes constituant le polymère vont pouvoir s’associer autour de ces ions et conduire à un assemblage géométrique. Ainsi liées, les molécules vont gêner et ralentir les mouvements de l’eau.
