Drinks - Bar Liberty
BAR LIBERTY
A selection of fermented beverages
This is an alcohol bar. Whilst we have a bit of a thing for wine,
that’s certainly not all we serve. Herewith is a selection of beer,
cider, sake, fortified things, mixed drinks, spirits and even
things that don’t contain any alcohol at all but are still,
somehow, delicious.
Please enjoy.

Apples. Floral attractive aromas, near dry rather than
off-dry. A perfectly balanced trinity of salt, acidity, and
delicate fruit, delivered with such lightness of texture.
2014 Premier Emois (Demi-Sec)
80
Apples. On the palate it is a little weightier than
Transparente and a touch sweeter. The softest of the
bunch - lovely, affectionate, secretive.
2014 Trois Pépins (Sec)

Apples, pears and quinces. Very bracing to drink, what a rush of salt and acidity, plus the
astringency of quince skin. It’s a very, very grown-up drink, and the most gastronomic.
2009 Poiré (Sec)
Pears. 8 native varieties of pear. Something quite special. Dry tasting with incredibly
delicate bubbles. Champagne-esque. Elegant, pristine, bright and very enchanting.

SPARKLING WINES
Fizzy wines. Not just for celebrating, but for refreshment & making the pain go away…
PET NAT
The O.G. of making wines sparkle. Lo-tech, no additions. The wine is bottled before it
has finished fermenting. Under pressure in the bottle, the CO2 generated from
fermentation has nowhere to dissipate and so is re-absorbed into the wine!

CHENIN BLANC
Some people (including many who work in
this bar) would say that the greatest of
grapes is Chenin Blanc.
From it are produced sparkling wines, still
wines, sweet wines and dry. Through all
of these styles shine intense pear, apple and
quince flavours, allied with delicate florality
and high acidity.

MACERATED WHITES
The vast majority of colour in wine comes from the skins of the grape. Thus, red wines
always include the skins to extract colour, whereas most white wines simply press the
grapes and discard the skins. The wines below are glorious exceptions - white wines
made with all parts of grape - a full expression.
