Chaîne des Rôtisseurs Association Mondiale de la Gastronomie BAILLIAGE NATIONAL DE TURQUIE GRAND CHAPITRE INTERNATIONAL 23rd – 25th, September 2016 ISTANBUL Dear friends, Chers Confrères, Chères Consœurs, You are cordially invited to the National Bailliage de Turquie - 2016 International Grand Chapitre, which will take place from Friday, September 23rd to Sunday, September 25th, 2016 in Istanbul. Expanding the ancient Greek colony of Byzantium by the order of the Roman Emperor Constantine the Great, the imperial city of Constantinople was for nearly a thousand years the last remaining outpost of the Roman (later termed Eastern Roman or Byzantine) Empire. It was finally conquered by the Ottoman Sultan Mehmed II in May 29th, 1453, an event often used to mark the end of the Middle Age. By the mid 1500s, Istanbul, with a population of almost half a million, was a major cultural, political, and commercial center. Ottoman rule continued until it was defeated in WWI and Istanbul was occupied by the allies. When the Republic of Turkey was born in 1923 after the War of Independence, Kemal Atatürk moved its capital to the city of Ankara. However, Istanbul has continued to expand dramatically; today its population is approximately 16 million. Industry has expanded even as tourism has grown. It continues to be a city that creates its own history at the intersection where Europe meets Asia. Besides its unique geographical position, Istanbul is a huge metropolitan city connecting two continents, cultures, religions and being home to sixteen million people; and one of the greatest business and cultural centres of the region, offering a wide variety of attractions to its visitors. Therefore, I personally, encourage you not to miss the opportunity to participate in our Grand Chapitre and at the same time enjoy the many attractive sites of Istanbul. In the following pages, you will find the Grand Chapitre program indicating the various activities, hotel accommodation and the prices thereof, for your information and possible reservation, which I kindly ask you to circulate to all the fellow members in your respective Bailliages. For the convenience of our international guests, we have included some practical information. We have also added a pre or post Grand Chapitre program for those who would like to extend their stay to explore other regions in Turkey. Please also observe that all reservation of events and direct reservation of your hotel accommodation must be completed as soon as possible and not later than August 5th, 2016. Acceptance of participants will be on a "first in - first served” basis. Please do not hesitate to contact me should you require any additional information. Looking forward to welcoming you to Istanbul! Vive la Chaîne! Mohamed Hammam Commandeur Membre du Conseil d'Administration Membre du Conseil Magistral Grand Echanson International Bailli Délégué de Turquie 2 Dear friends, Chers Confrères, Chères Consœurs, It is my great pleasure to extend a very warm welcome to the Grand Chapitre of the Turkish National Bailliage on September 23 - 25 2016 in Istanbul, at the point where Europe meets Asia. My friends, I am convinced that participating in this Grand Chapitre would be a really great experience for you. Istanbul is located on both sides of the stunning Bosphorus, between the Black Sea and the Marmara Sea, and between Asia and Europe, both physically and culturally. Istanbul is also one of the largest cities in Europe and even in the whole world. Tens of Turkish Chaîne members have visited our Finnish Chapitres during the years. That’s why I am especially delighted by the appointment of the Chaîne worldwide President Mr. Yam Atallah to act as the Induction Officer of this Turkish Grand Chapitre, which also marks the 22nd anniversary of the Turkish Bailliage. The Turkish cuisine is one of the most well known in the world. The combination of flavors and ingredients are blended together to form dishes historically influenced by a number of cultures including the Greeks, Ottomans, Middle Eastern and Balkans. Even a short glance at the menus, created by the best chefs in Istanbul, confirms that a great experience is waiting for us. The excursions have been carefully planned and will offer impressive and breathtaking views and tastes. Let’s spend together these 3 days in friendship and harmony, meet old and new friends and enjoy the Turkish gastronomic highlights in one of Europe’s most beautiful and interesting cities. And last but not least …my warmest thanks to Mohamed Hammam and his team for arranging this unique event. Vive la Chaîne! As each succeeding sultan ascended to the throne, he added parts to the palace, indicating the different tastes and styles of architecture over four centuries. In 1924, the palace was turned into a museum. As well as being a royal residence, the palace was used as a setting for state occasions and royal entertainments. The Imperial Harem, was once home to the Sultan’s (ruler) mother – ‘Valide Sultan’, sultan’s concubines, wives and the remainder of his family as well as their servants. Many of the rooms of the Harem were designed by the great architect Sinan. 8 The famous Basilica Cistern is simply an ancient water reservoir. It was the largest of almost two hundred Byzantine period cisterns that lie beneath the city of Istanbul, formerly known as Constantinople. Columns and capitals of earlier pagan temples were recycled in its construction, providing a very decorative appearance; thus it is often called ‘saray,’ which means ‘palace’ in Turkish. LUNCH AT NAR RESTAURANT From 13:00 to 14:30 NAR Restaurant offers a menu of dishes representing traditional and historical Turkish cuisine, ranging from palace dishes to regional specialities. Since the Turks appeared on the stage of history they have created cultural syntheses that have left their mark on all the regions where they have lived, and the Turkish contribution to cuisine has been wide ranging. 9 VISIT GRAND BAZAAR From 14:30 to 16:30 During the Byzantine period the area of the Grand Bazaar was a trade center. After the Turks came to Istanbul, they continued using the same area for commerce and added many commercial buildings. Over the centuries many of those commercial buildings were all connected to each other with narrow streets and the streets were covered off to form the Grand Bazaar. With more than four thousand shops, it covers an area of more than 30 hectares, and it is accepted to be one of the greatest and oldest bazaars in the world. Grand Bazaar may be overwhelming for many people, but if you know what you are doing there, it is actually a fascinating experience. 10 Friday, September 23rd, 2016 BOSPHORUS CRUISE From 19:00 to 23:30 Definite sailing time is 19:30 The Bosphorus is a narrow, navigable strait between Europe and Asia connecting the Black Sea to the Marmara Sea. Istanbul is situated on both sides of the Bosphorus. In ancient and medieval times almost all commerce between the Mediterranean and Black Sea was routed through the strait. It is still an important artery of international trade. An average number of 55 thousand ships pass through the Bosphorus annually. Cruising on the Bosphorus is a unique experience between the two continents; Europe and Asia. There are beautiful waterfront houses, palaces, fortresses and woods all along the Bosphorus. 11 Saturday, September 24th, 2016 Istanbul Sightseeing From 09:30 to 14:30 hrs VISIT HAGIA SOPHIA & BLUE MOSQUE From 09:30 to 11.45 Dress Code: Casual While the Hagia Sophia is probably not the oldest intact building in the world, it certainly comes close. Today, the (current) Hagia Sophia is 1478 years old, and has survived hundreds of earthquakes throughout history. Its age, size, magnificence, architecture and mystical atmosphere make it truly a unique place in the world. Throughout Byzantine and Ottoman history, the Hagia Sophia has been the Imperial Church or Mosque. Emperors were crowned, victories were celebrated and Ottoman Sultans prayed in this remarkable building. For many centuries the Hagia Sophia was possibly the largest shrine in the world. 12 The original name of the Blue Mosque is the Sultan Ahmed Mosque. However, visitors fascinated with the beautiful turquoise blue tiles always remember it as the Blue Mosque. It was built by the 19-year-old Ottoman Sultan, Ahmed I between 1609 and 1616. It can be accepted as one of the two most important mosques in Istanbul. The Hippodrome was once upon a time a huge stadium-type building where chariot races were held. During the Byzantine period, the Hagia Sophia was the religious center, a place that belonged to God; the palace belonged to the emperor; and the Hippodrome was the civil center for the people. 13 VISIT SPICE BAZAAR & WALKING TOUR WITH STREET FOOD TASTINGS From 12:00 to 14:00 The Spice Bazaar was built in 1664 as a part of the Yeni Cami complex, which is located next to it. It is also called the Egyptian Bazaar, because the shop keepers used to sell spices and herbs which were brought from or through Egypt. During the Ottoman Period it was known as a place where shops sold only spices. Today in addition to spices and herbs, they sell dried fruit, basketry, jewelry, haberdashery, drapery and suchlike. Culinary walking tours with food tastings through Istanbul’s most delicious and historic neighbourhoods help you understand the contemporary life and culture of the city. Few travellers, unfortunately, have the opportunity to have real tastes and tours of these places. 14 Saturday, September 24th, 2016 From 17:30 to 24:00 Induction Ceremony & Gala Dinner at Swissôtel The Bosphorus Istanbul Dress Code Black Tie/Tuxedo for gentlemen - Evening dress for ladies with Chaîne Ribbon 15 Sunday, September 25th, 2016 From 12:00 to 15:00 Farewell Brunch at Café Swiss Swissôtel The Bosphorus Istanbul Dress Code: Smart Casual with Chaîne Ribbon 16 Accommodation Swissôtel The Bosphorus Istanbul A member of the Leading Hotels of the World and awarded Europe Luxury Hotel 2013 by World Luxury Hotel Awards, Swissotel The Bosphorus, Istanbul is a five-star luxury hotel right in the centre of Istanbul on the European banks of the Bosphorus. Cappadocia (Kapadokya in Turkish) is the ancient and modern name of a remarkable region in Central Anatolia. It is a geological wonderland, which covers a very large region with beautiful valleys, very interesting picturesque formations, hundreds of rock-cut churches, tens of underground cities, rock-carved fortresses, people living in cave houses, caravansaries from the old trade routes, pottery on the kick-wheel, delicious local food, hot-air balloon rides and luxurious cave hotels. Cappadocia is such a unique experience! It can be said that Ephesus is one of the most beautiful ancient cities in the world. The city has been excavated for more than one hundred years; the extensive remains are predominantly from the later Roman period. SIGHT SEEING With its long history at the center of empires, Istanbul offers a wealth of historic and religious places to take in. The bulk of these are located in Sultanahmet-Old City, including the Hagia Sophia, Topkapı Palace and the Sultanahmet Mosque (Blue Mosque). while the Bosphorus has a number of waterside palaces which are all on the "must-see" list of Istanbul. For further information and/or arrangement of any of these, you can consult with our member Mr. Şerif Yenen: [email protected] [email protected] VISITING A MOSQUE Five times a day, the "müezzin" calls the Muslims to prayer in the mosque. Before entering a mosque, Muslims wash themselves and remove their shoes. Foreign visitors should also remove their shoes and show the respect they would at any other house of worship and avoid visiting the mosque during prayer time. Women should cover their heads and arms, and not wear miniskirts. Men should not wear shorts. (In certain famous mosques, overalls are provided for those not suitably dressed). HAMAMS (TURKISH BATH) A visit to a hamam is an essential part of any trip to Istanbul. Take care in selecting a hamam as they can vary greatly in cleanliness. ELECTRICITY Electricity in Turkey is 220 volt, 50-60 cycle. If you intend to bring any electrical equipment, an adapter that converts electricity from 220V to 110V is suggested. Plug: European round/ 2-prong plug. STAY HEALTHY Similar to many European countries tap water is mostly drinkable, but it may not be safe depending on where you drink it. Although the tap water itself is clean, many local water tanks are not maintained 21 properly, and one should try to avoid tap water at all times. Locals widely prefer bottled water and the same applies for the restaurants. Food and drinks are mostly of international standards. Some Turkish foods are known to use a variety of spices which may affect international tourists who may not be accustomed to such ingredients. Use common sense when buying certain foods, particularly from street vendors unless it is guided by an authorized person. MONEY EXCHANGE Money exchange is very easily done at all banks and private exchange centers. Daily newspaper publishes the daily exchange rate. US dollars and Euros are accepted at some stores. SHOPPING Shops in Istanbul are officially open Monday to Saturday, 9:30am to 7pm. However, shopping malls are open seven days a week from10.00 hrs to 22.00 hrs. Grand Bazaar (Kapali Carsi)Istanbul's grand old bazaar with an estimated 4400 shops lined along covered walkways. It is said to be the world's oldest shopping mall. The shops are organized around their wares, e.g. the silver jewelers are clustered together, the carpet shops are clustered elsewhere and the shoe shops are bunched together somewhere else. Parts of it now are rather touristy and you're likely to pay a little more for your purchase than elsewhere but with the vast selection you'll find what you're looking for and it's one of Istanbul's character pieces. However, you may bargain to get the lowest possible price. Egyptian Bazaar (Mısır Çarşısı, also known as Spice Bazaar) in Eminönü district is also a covered bazaar, which is a lot smaller than Grand Bazaar, and as its name implies, houses herbalist and spice shops. Shopping Malls Istanbul has become a shopping mall paradise during the recent years.
