•P our émincer le fromage. 20 7. NETTOYAGE ET RANGEMENT 8. If necessary, use the spatula to scrape food from the sides. • To chop nuts, wait until the motor has stopped, place the nuts in the bowl and press several times. Frequently check that the nuts don’t stick to each other in the bowl. Use the spatula to distribute them around the bowl. . B. Slicing and Shredding Shredding disc Adjustable slicing disc • To slice average sized round fruit and vegetables like apples or onions, cut the ends so that the fruit or vegetable can lie flat on the disc. • Select fruit or vegetables that are firm and not too ripe. • Remove the core and seeds or stones before slicing. • Fill the crescent-moon shaped feed tube according to the desired result. • For long slices or strips, cut the food lengthwise equal to the length of the feed tube and fit the pieces into the tube horizontally. • Do not exceed the MAX level indicated on the lid. To cut into rounds (carrots, cucumbers and other long vegetables), cut the food to the height of the tube and place the pieces vertically. IMPORTANT Make sure you don’t fill the chute too tightly to avoid blocking the pusher. Do not press the pusher too firmly so as not to damage the appliance. To shred or slice soft fruits or vegetables, like bananas, mushrooms, strawberries or tomatoes, press very lightly so as to avoid squashing these. Always use the pusher to shred or slice foods. Never put your fingers or the spatula into the feed tube. 31 • To slice raw meat or poultry, cut the food to the size of the opening. Place the pieces in the freezer until they are hard to the touch but still easy to pierce with the tip of a knife. Place the food in the opening, flat side down, and press on the pusher to slice. • To slice cooked meat or poultry the food must be cold, and if possible cut in pieces equal in size to the opening. • To slice sausage, use the smallest opening. Make sure you place the pieces in vertically, tightly enough so that they don’t fall when the disc is started. • To slice cheese: not all cheeses can be sliced. Generally, soft cheeses don’t slice easily and very hard cheese could damage the disc or the appliance itself. Never try to slice a cheese that is too hard to cut with a knife. Please refer to the summary table and the notes under section 5 (‘Advice from the Chefs’) in this booklet. C. Kneading Dough Dough blade for the XXL bowl This unit was designed to let you prepare dough in very little time. Generally there are two kinds of dough: • Yeast doughs contain yeast and a mixture of flour. They are generally prepared with water and are even, pliable and stick slightly to the fingers. When they have been kneaded correctly, they form a ball. • Doughs for sweet or savoury preparations contain a larger proportion of sugar, butter and/or eggs. They are often prepared with milk. They are rich and sticky doughs that don’t always form a ball after kneading. The two types of dough are prepared using button. the • Press and an indicator light will come on, indicating that ‘Knead’ has been selected. Use only the XXL bowl for the knead function D. Beating or Whisking Whisk assembly • The whisk assembly can be used to beat egg whites. Place the egg whites in the work bowl. Press the button and hold until the whites are the desired consistency. Tip : add a pinch of salt or a few drops of lemon juice for better results. The whisk assembly lets you make preparations like: • Whipped cream (chantilly, sabayon, tiramisu…) • Mayonnaise (béarnaise, rouille, crème mousseline…) • Meringue • Vinaigrette 32 E. Overloading may damage the accessories and/or the appliance. 5.ADVICE FORM THE CHEFS : • The extra-large food opening lets you create different cuts by letting you safely place food over the length of the opening and horizontally. • With the pusher, you can feed the processor in various ways. Either by the small tube for small solid foods or liquids, or by the pusher itself for liquids (preparing breads or soups). This allows for better distribution of the liquid. • Cut large pieces of food into 3 cm pieces before chopping them, you’ll achieve a better result. The bigger the pieces, the more time required to prepare. • To slice whole peppers perfectly, remove the stem and seeds from the top. Don’t cut the other end of the pepper so that it remains rigid. • Use the button to chop. This will allow the food to fall to the bottom of the bowl after each pulse, and the food will thus be perfectly chopped. Check the texture frequently so as not to over process. This principle also applies for crushed ice. To chop herbs, the bowls and the blades must be dry. The greater the quantity of herbs the finer they will be chopped. They can be frozen in a sealed container. • To purée potatoes, use the shredding disc (4mm). The purée will be a perfect consistency. • The shredding disc can also be used for ice. It creates very finely crushed ice for cocktails. • The whisk assembly (less sugar in the meringue) lets you create lighter preparations. The whisk may nonetheless not be used for making heavy pastries, crushing ice or dicing solid food products. 33 • To make mayonnaise, use the chopping blade. It’s much faster and the result is perfect. • For a thick preparation like ‘butter cream’, soften the butter to prevent it from clotting. • Use cold water to make bread doughs. The dough will have a better texture and the result will be of high quality. The bread dough is ready when it forms a ball and does not stick to the sides of the work bowl. The amount of water may vary depending on the quality of the flour. • A savoury bread dough should be kneaded correctly, it should be pliable, easily folded and slightly sticky. There should be no residue left inside the work bowl when you remove the dough. •O nce the dough has formed a ball that leaves no residue in the bowl, knead the dough for 30 seconds. Stop the appliance and check the dough to make sure it has been kneaded properly. If the dough is hard, crumbly or not mixed evenly, continue to knead until it is pliable and folds easily. Before starting to knead the dough again, make sure the appliance is correctly assembled. For a more elaborate dough, you can add ingredients like cheese, hazelnuts or raisins in the last five minutes of kneading. •A sweet dough (containing a higher proportion of sugar, butter and/or eggs) requires less kneading time after the ingredients have been mixed. • For small quantities of dough (when using less than 500g of flour), use the chopping blade rather than the dough blade. The dough blade does not extend far enough into the bowl and thus cannot mix in all the flour in the bowl when you’re processing smaller quantities. •B efore kneading the dough, ensure the yeast is active (follow the manufacturer’s instructions). • To knead larger quantities of dough that exceed the recommended amounts (see section 4E), divide the dough and process in equal batches. • Not all cheeses can be sliced. Generally, soft cheeses cannot be sliced and very hard cheeses may damage the disc or the appliance. It is possible to grate most cheeses except soft cheeses. The only exception to this rule is mozzarella which can be grated if it is placed in the freezer until it is hard. Hard cheeses like Parmesan can only be grated at room temperature. • Liquids must be added through the opening of the small feed tube while the machine is running. Add liquids in a slow steady stream, only as fast as dry ingredients absorb it. If liquid spills over the bowl or splashes up the sides, stop pouring but don’t stop the machine. Wait until the ingredients are mixed and then slowly add the rest of the liquid. 34 • Always add liquids to the dough through the feed tube, never pour it directly into the bowl. 6. QUESTIONS/ANSWERS: WHAT DO I DO IF: The motor doesn’t start? ANSWERS A safety mechanism may be preventing the motor from starting if the appliance has not been correctly assembled. Make sure the bowl(s) and the lid are correctly assembled. If the appliance is correctly assembled, make sure the cut food placed in the feed tube does not exceed the maximum fill marker, so that the stem can activate the motor. If the motor does not start, check the lead and the outlet. The food processor turns itself off when The lid may have been dislodged. Make sure it is properly locked in place. running? A safety mechanism prevents the motor from overheating in the event of excessive and wait 10 to 15 minutes for the food processor to cool down before strain. Press starting it again. The food is chopped or mixed unevenly? The ingredients should be cut in equal pieces (about 2.5 cm) before adding them to the bowl. Work in batches to avoid overloading the appliance. The slices are uneven or of unequal thicknesses? Place food of equal size in the feed tube. Apply even pressure to the pusher. Ingredients fall in the feed tube? For better results, the large feed tube should be completely full. For small amounts, use the small feed tube. There is still food on the top of the disc? It is normal for small sized ingredients to stick. Cut these ingredients by hand to add to the other processed ingredients. The motor slows? There may be too much dough for your food processor. Remove half of the dough and process in batches. It is also possible that the dough is too wet. If the motor accelerates, let the appliance run. If the motor does not accelerate, add more flour (1 tablespoon at a time) until the motor accelerates. Continue until all the flour has been mixed into the dough and the ingredients stick to the sides of the bowl. The liquid does not mix into the solid ingredients? Always start the processor before adding liquid. Add the liquid slowly and in a steady stream so that the dry ingredients have time to absorb it. If too much liquid is added, wait until the ingredients in the bowl are mixed and then add the rest of the liquid (without stopping the appliance). Pour the liquid onto the dough through the feed tube and not directly into the bowl. The large pusher moves when processing dough or other heavy ingredients? The locking mechanism on the Pusher (located at the top of the handle) should be pulled out. It is normal for vibrations to be produced. 35 The blade does not stay on the motor shaft? It is possible that the blade was not properly attached before starting the appliance. A dough that is too sticky might also cause this to happen. If this is the case, reattach the blade and immediately add 2 tablespoons of flour through the feed tube while the machine is running. The dough made has not absorbed all the ingredients? It is possible that the amount of dough exceeds the maximum recommended amount of your processor. Remove half the dough and process in batches. The dough may be too dry. It is also possible that the dough is too wet. A ball of dough forms on top of the blade and the dough is not kneaded evenly? Stop the machine, gently remove the dough. Divide the dough into three parts and distribute these pieces evenly in the bowl. The dough remains hard after being kneaded? Divide the dough into 2 or 3 portions and distribute these evenly in the bowl. Process the dough for 10 seconds or until it is uniformly pliable and can be perfectly folded. The dough is too dry? While the machine is running, add some water (1 tablespoon at a time) until the dough has absorbed all the ingredients in the bowl The dough is too wet? While the machine is running, add some flour (1 tablespoon at a time) until the dough has absorbed all the ingredients in the bowl. The lid opens at the back and/or makes The lid opening at the back and the noise that could result does not prevent the a lot of noise? appliance from working. Simply close the lid again to lock it in place. The motor slows when it is processing? It is possible that the maximum recommended quantity has been exceeded. Remove some of the ingredients and continue processing. It is difficult to remove the chopping/ mixing blade from the bowl? The blades have been designed to be locked into the bowl and not come loose when emptying the bowl. Being careful not to injure yourself, gently force the blade loose by pulling on it. The processor vibrates/moves while it is running? Make sure that the rubber strip on the base of the appliance is clean and dry. Make sure that the maximum recommended quantity has not been exceeded. The large pusher falls when the bowl is turned? The pusher locking mechanism (located above the handle) should be engaged. 36 7. CLEANING AND STORAGE 8. 53 7. REINIGEN UND VERSTAUEN 8.
