Glacio endeavours working with ‘the best in class’. For the creation of our ice cream
menu’s, we attracted Roger van Damme. He is one of the most experienced and
innovating Belgian patissiers. In 2009 one of his desserts was elected the greatest dessert
in the World! One year later, Roger was elected Chef of the Year by GaultMillau.
Roger Vandamme is inspired by his good friends Sergio Herman and Albert Adrià, who
was the dessert specialist at El Bulli.
He is known for his complex, intense, unforgettable desserts.

Brussels is not only famous for its diversity and
international character. Brussels is also known
for the delicious Belgian Chocolate in many
shapes and flavours. Or the traditional Belgian
Kriek beer. A fruit beer made with the naturally
fermented beer type ‘lambic ‘ and sour
cherries. The name ‘Kriek’ refers to the Flemish
word for a sour cherry.

chosen. Mint Chocolate represents the
UK. This flavour refers to the ‘After Eight’chocolates, which were invented in the early
60’s by Henry Isaac Rowntree in York. These
chocolate mints were created to eat, as its
name suggests, after dinner. The ice cream
variant matches perfectly together with the
mild Choco Split and the surprisingly fresh
Grapes Red & White.

Coupe Berlin is inspired by a typical northern
Germany dessert, Rote Grütze. It’s a sour
sweet combination of red fruits with sugar, fruit
juice and milk, cream or vanilla sauce. The ice
cream variant Rote Grütze consists of vanilla
ice-cream marbled with a sorbet of six berries:
strawberry, sour cherry, blackberry, raspberry,
red and black currants. The strawberry sorbet
gives an extra touch to the fruity part.

Dame Blanche is the most popular Belgian
dessert. It’s simple, however a real delicacy
when made with premium vanilla ice cream
and quality hot chocolate sauce.
The King of Chefs Auguste Escoffier, a
real opera lover, named this dessert after
François-Aldrien Boieldieu’s opera, ‘La Dame
Blanche’.

The scoop Belgian Chocolate is made of top

is loaded with gianduja chunks. Gianduja is a
sweet chocolate with 30% hazelnut paste. It’s
extremely soft and melts almost immediately

TARTUFO BIANCO
Tartufo is original an Italian ice cream dessert. Tartufo
Bianco is a white variant and it means ‘white truffle’. It’s
strong espresso ice cream surrounded by fresh cream
ice cream. Everything is coated with crispy meringue
pieces. This crunchiness gives an extra touch to this
‘Italian delight in every bite’.
CAPRICCIO CAFÉ
Capriccio Café is a dessert for young and
old. Discover the caramel heart surrounded

BRUSSELS WAFFLES
Belgium is, besides chocolate and beer, also famous for its waffles. The best known are the Brussels Waffles and the Liège Waffles.
The latter is a sweet waffle filled with chunks of pearl sugar. The Brussels Waffle is a sugarless rectangular waffle with big, deep, square
pockets. It’s a heavenly waffle, served warm with powdered sugar and additions like ice cream, whipped cream or fresh fruit.
