végétarienne : prête en quelques minutes, elle est
parfaite pour préparer un repas équilibré avec un reste
de légumes et un fond de paquet de céréales
ou de flocons…
L
a base de la galette de céréales
est... les céréales. En flocons pour
une galette vite prête, cuites pour
passer un fond de riz ou de quinoa, ou
encore en farine pour lier les ingrédients
ou pour une recette express. Mais dans
une galette de céréales, on trouve aussi
des légumes, des petites graines, du
fromage, des œufs, des épices ou des
herbes aromatiques... Bien sûr, il est
possible d’adapter la recette pour ceux
qui préfèrent éviter les œufs, le gluten
ou le lait de vache, et de marier céréales
et légumineuses pour bénéficier de
protéines complètes.

LES CÉRÉALES
La préparation des galettes et le
résultat seront très différents selon la
forme des céréales que vous utilisez.
Alors que les flocons demandent un
peu d’humidité (lait végétal, yaourt
ou tofu soyeux) ainsi que quelques
minutes pour s’attendrir et s’amalgamer
avant cuisson, les céréales déjà cuites
peuvent être mélangées avec les autres
ingrédients et réchauffées tout de
suite, pour un résultat très croustillant.
N’hésitez pas à les mélanger avec des
oléagineux ou des légumineuses pour
un apport en protéines complètes.
Quelques idées d’associations : flocons
de millet et d’azuki, reste de semoule
et pois cassés, flocons de châtaigne
et sarrasin... Le quinoa possédant
tous les acides aminés essentiels, il
peut être cuisiné seul, comme le soja.
Vous pouvez d’ailleurs ajouter un peu
de tofu (en petits morceaux ou mixé)
à votre préparation, ou confectionner
vos galettes avec de l’okara, une pâte
riche en fibres et en protéines issue
de la fabrication du lait de soja (voir
« Je sais faire des laits végétaux »,
page XXX). Quant à la farine, il n’est
pas indispensable qu’elle soit riche
en gluten, même si celui-ci permet
une meilleure amalgamation des
ingrédients. La farine de pois chiche
mélangée avec de l’eau et un peu
d’huile d’olive permet par exemple, par
sa composition très particulière, de
préparer des galettes toutes simples et
nutritives.
