These cheeses, typically large and very heavy, fall into two distinct sub-groupings; hard
table or grating cheeses, and mountain-style cheeses. Both start from the same process.
The curds, after forming, are cut up into smaller pieces, and then further heated to cause
the release of excess moisture. The end result is some of the world’s most popular
cheeses. Comte, Emmental and Gruyère are characteristic of the mountain cheeses; some
have the typical eye formation, which are formed during the long aging process where
carbon dioxide develops and creats the holes.

hard texture and thick outer rind are a result of a ripening process that begins by
soaking the cheese in salt-water brine for over 20 days.

cheeses with Bloomy Rinds, characterized by a soft, white exterior; and cheeses with
Washed Rinds, whose orange colour, and strong aroma, clearly sets them apart.
Both types have a supple and smooth paste with a creamy, rich flavour. The fat

Cheese family types
Fresh Cheeses:
Describes unripened, young, creamy cheeses with often high
water content.
Frequently no rind at all and with a moist even texture throughout.
Goats Cheeses:
Goat’s milk cheeses provide a wonderful alternative flavour with a
full range of choices in fresh, bloomy rind, washed rind, blues and
hard cheese types.
Bloomy Rind:
Brie and Camembert are the two best examples of this style of soft
cheese which - when young - has a delicate mushroomy flavour,
creamy texture and a soft, downy, pure white rind.
Washed Rind:
These cheeses have a characteristique orange-red colouring.
The rind which has been regularly washed and brushed with brine.
Through this process, most develop a strong distinctive odour with
a pleasant, flavoured character.
Pressed:
During the time of moulding, these cheeses are placed in a press
to eliminate some of their water content.
Pressed Cooked:
Hard cheese: The curd has been slowly heated to extract moisture
content, amd then pressed.
The rind is firm and thick. often referred to as Mountain cheeses
which are famous for their fine fruity flavours.
Bleu Veined Cheeses:
Are ripened by the action of oxygen - loving moulds incorporated
into the paste. The most commonly known fungus spore used is
called Penicillium Roqueforti. By piercing the cheese with long
needles to make air tunnels, the cheesemaker enables the mould to
spread evenly throughout the paste.
