Marsannay, le Château vous ouvre ses portes pour un circuit de visite-dégustation.
Vous découvrirez une ancienne cuverie reconstituée, nos caves à bouteilles et de
grandes caves à fûts voûtées. Cette visite s’achève par une dégustation des vins du
Domaine dans un tastevin typiquement bourguignon remis à l’entrée. Au cœur du
Château, vous découvrirez également une superbe salle de réception, cadre idéal
pour des déjeuners ou dîners de prestige. Des traiteurs agréés vous préparent sur

An introduction to Burgundian cooking in the company of a Beaune chef ! Some of us dream of becoming a
cordon bleu in the land of great chefs while others simply want to produce such specialities as oeufs en
meurette (eggs in red wine sauce), coq au vin and jambon persillé (parsleyed ham). In little groups of two
or more, you will learn the secrets of the classic Burgundy dishes. You can choose between trying out the
recipes yourself or simply taking notes, but whatever you decide you will be rewarded with a delicious meal !

Eggs, meurette sauce
Make the sauce, using 60 gr of butter, 150 gr of diced bacon, onion,
shallots and 1/2 lt of a good red Burgundy wine.
Cook over gentle heat for 25 mins with a clove, a small bouquet garni
and a sugar lump.
Strain the liquide and reserve the diced bacon. Poach one egg per
person in the liquid. Reserve the eggs.
Reduce the sauce by boiling rapidly-thicken with a little butter and
flour.
Serve the eggs on toast or croutons, pour over the sauce, garnish with
the diced bacon and parsley.

In Beaune, heritage is no mean
word. The site on which the town is
built has been inhabited since well
before the dawn of our times. The
first houses were built by the Gauls
around 52BC, giving the town its
name : Beaune, after the Celtic sun
god Belen.
After the invasion of the Barbarians,
Beaune began to expand. A strong
city wall was constructed in the 7th
century, on the same outline as the
current ramparts.
This crossroads between the North,
the South and the East thus became
the capital of Burgundy and the
Dukes chose Beaune as the site for
their palace and parliament.
Beaune is a city of art, of culture,
and a rich history is hidden behind
the façades of its public and private
monuments. The Middle Ages are
deeply rooted here and their
legacy lives on, well-preserved
even to this day.
The 17th and 18th centuries are
also represented architecturally :
the Porte Saint-Nicolas and the old
Eglise de l’ Oratoire, the convent of
the Minimes (the Municipal
Library), and several beautiful
Rennaissance façades in the rue
de Lorraine.
But Beaune is not just a town of
ancient monuments.
It is also home to a number of
great scholars and artists.

ÉTIENNE-JULES MAREY
(1830 - 1904), the inventor of the
photographic gun, has a memorial
museum in Beaune. In 1892 he
created the first cinematograph,
the forerunner of modern cinema.
The famous GASPARD MONGE
(1746-1818), who invented
descriptive geometry and who
was also the co-founder of the
Ecole Polytechnique.
MICHEL TOURLIÈRE
The tradition of tapestry lives on
through the work of Michel Tourlière,
a contemporary artist who draws
his inspiration from the symbolism
of wine and the vineyards and
whose work is displayed in the
Musée du Vin de Bourgogne.

(Hospices de Beaune). The HôtelDieu, or Hospice of Beaune, was
founded in 1443 by Nicolas Rolin
and his wife Guigone de Salins to
come to the aid of the town's and
region's needy. Since then it has
been in continual use. The medical
facilities were transferred to more
modern premises in 1971. Built by
Jehan Wiscrère in the flamboyant
Gothic style, the central courtyard
(Cour d'Honneur) is remarkable
for its glazed-tile roof, which
contrasts spectacularly with the
austere façade.
During the visit, discover the
Grande Salle des Pôvres, the
chapel, the kitchens and the
apothecary room with its
ancient earthenware. The
Museum boasts a collection
of tin, tapestries and priceless
paintings, including Roger
van der Weyden's famous
“Last Judgement“.

From the 12th and 13th
centuries onward, architects
took their inspiration from
the works of the monks at
Cluny and the Collegiate
Notre-Dame in Beaune is a
fine representation of the
Romanesque Cluny style.
Over the centuries, Gothic
decoration and a
Renaissance chapel were
added. In the 19th century,
Viollet le Duc participated
in safeguarding the
Collegiate and left his mark
with the construction of a
covered gallery. In the 15th
century tapestries “life of the
Virgin“ are in the chancel.

Wine-making is an age-old tradition
in Chorey-les-Beaune and the
vineyards here have been cultivated
since the 12th century.
In 1831, Doctor Morelot reminded
people of the exceptional quality
and finesse of this light, elegant
wine, much appreciated by winelovers, saying : “The vineyards of
Chorey must be among the best
in the southern district of Beaune.“
Remarkable for their finesse,
body and warmth, these
wines are to be laid down
for several years before
revealing their wonderful
character.
One of the largest vineyards of the
Côte, Aloxe-Corton is named after
Othon, Emperor in 69 AD.
The soil here is very special, and
the smallest plot of land is planted
with vines. The magical names of
Corton-Charlemagne, Corton and
Aloxe-Corton are all grands crus
from the Côte de Beaune.

cover 200 hectares and face

The glazed tiles and
their legend.
In Burgundy, and particularly
in the Hautes Côtes and the
Côte de Beaune, the visitor
will notice and admire the
famous Burgundy roofs : those
glazed tiles of shimmering
colours which add a different
dimension to the buildings.
What are their origins ? It
would appear that these
multicoloured roofs originate
from Central Europe.
However, the style was very
popular and spread across the
region to the point where it
came to be considered
typically Burgundian.
Many monuments in Beaune
and its surrounding area have

these very distinctive multicoloured
roofs. Moreover, the tradition is being
perpetuated : whenever a roof is
restored, the glazed tiles appear, even

Perched on the side of a hill,
Pernand-Vergelesses offers a
spectacular view of the vineyards
from the statue of the Virgin Mary
(dating from 1855).“La Mère
Fontaine“, the oldest house in the
commune, has recently been
restored and is built on the spring
around which the village grew.
The aligotes are particularly
well-appreciated and the reds
have character. One part of the
vineyards produces Corton and
Corton-Charlemagne.
The wine producers make highlyregarded fine wines of the HautesCôtes de Beaune. Small fruits such
as cherries and raspberries are
also grown on the land here.

Following the combe of FontaineFroide, in a charming valley
irrigated by the Rhoin, you come
across the lovely village of
Bouilland with its magnificent

Bouze-les-Beaune was founded
by the monks of Sainte-Seine at
the beginning of the Middle Ages.
On the site of la Molle-Pierre, a
cave bears witness to the presence

Le Pas Saint-Martin
(Saint-Martin’s footprint)
The remarkable countryside of
the Pas Saint-Martin is accompanied by a legend which gave
the place its name. Conversion
of the region to Christianity
was completed around the 4th
and 5th centuries, which corresponds to the time Saint
Martin was alive.
Yet there is no proof that he
passed through this region
even though the church at
Mavilly bears his name. And
we must suppose that the
legend of Saint Martin’s footprint dates from this journey.
Having come to convert the
people of the region, Saint
Martin is said to have found
himself face to face with the
demon. Astride a mule, the
saint fled into the mountains,
but the devil cut them off at
the top of the cliffs, near to the
place now known as “le Pas
Saint-Martin“. Encouraged by
the saint, the mule calmly
leapt across the valley to land
on the territory of Mandelot.
WALKS IN FOREST
The saint, having escaped from the
demon, forbade him any retribrution
by destroying the pagan temple. And in
the rock can be seen the mark left by
the mule's hoof.

Built on a hillside, Monthelie
offers walkers some typically
Burgundian narrow streets up
the mountainside. A small wineproducing commune, yielding
fine, sturdy reds with a strong
colour. In time they develop a
full and harmonious bouquet.
The ‘premiers crus’ can be found
further along the Volnay massif
and give rise to a wine which is
both subtle and elegant. The
Monthelie appellations are
produced at the bottom
of the village along
the valley which runs
from North to South.
Encircled by sheer cliffs and rocky
heights, Saint-Romain is one of the
oldest villages in the region.

In the 12th century a castle was
constructed on the rocky spur
which dominates the whole valley.
It was destroyed in 1675. A beautiful
walk takes in the ruins and the view
out over the vineyards. These produce
ruby-tinted reds which are lively,
fruity and sturdy. The muchappreciated whites are firm and dry.

be said that the attraction is obvious!
Sheltered by rocks, a good water
supply and perfect visibility to
safeguard against enemy attack.
Everything needed to survive in a
hostile environment.
The first trace of human life here dates
back to 4000 BC, in the Neolithic
period when people lived at the foot of
the cliffs until the end of the Bronze
Age (800 BC). The site then became a
refuge for the Gauls, as testified by 47
pieces of silver.
The barbarians invaded the area in the
4th century and, in the 9th century,
the Barbarian knights inhabited a site
just below the entrance to the cave. In
the 10th century it was decided to
build a castle on the rocky spur, and
thus two different villages were born :
Saint-Romain-le-Haut and SaintRomain-le-Bas.
As well as visiting the site, visitors can
come to the heritage centre to learn
about archeology and cultural and
natural heritage.

A major wine village producing
some very fine wines from the
Hautes-Côtes de Beaune, la
Rochepot is situated on the natural
route joining the southern regions
with the north. The village is
overlooked by the famous château,
but the site has been inhabited
since Neolithic times, as proved
by the presence of dolmens and
a covered alleyway.
Orches, Evelle and Baubigny are
three hamlets which are built in
steps up the vine-covered hillside.
Orches perches on the magnificent
rocks which overhang the valley.
EVELLE is more reasonably
situated half-way up and is very
pleasant to walk around.
As for BAUBIGNY, it boasts a church
whose portal and door date from
Gothic times, whilst the main
building is Romanesque.

Another wine village, SaintAubin nestles in a combe
and its main street follows
the path of an ancient
Roman road. The soil here

rebuilt on a neighbouring rock. It was
here that Philippe Pot (1428 - 1494),
Lord of the Domain and Ambassador
to the Duke of Burgundy in London,
was born.
Sold as national estate in 1799, the old
fortress saw its dungeon destroyed. In
the 19th century, Colonel Sadi-Carnot,
son of the President of the French
Republic, decided to give it a new
lease of life, following the medieval
plans.
The feudal domain reveals many
treasures : the guardroom, bedrooms,
kitchen and dining room, as well as
the old 12th century chapel can all be
visited and the covered way offers a
magnificent view. Not to be missed.

The covered market
and streets of Nolay
The renovation of the 14th
century covered market and the
old town has given the medieval
town of Nolay a new look.
The covered market dates
back to 1388. According to
the Abbé Courtepée, the
commune of Nolay possessed
a fair from the beginning of
the 14th century and it is
highly likely that the covered
market was constructed at this
time. The distinctive feature of
the market is its roof of
Burgundy Stone tiles, which
means that the building has to
support a weight of almost
800 kg per square metre. This
monument is one of rare and
fragile beauty.
Right next to the church, the
market forms the heart of the
old town. All the adjacent
streets have been renovated

medieval houses. The paved semipedestrianized streets add the
finishing touch to the town centre’s
new look.
Markets and fairs will be able to set up

other tradesmen of the 16th century.

Vauchignon is the last village one
meets before coming to the
“Cirque at the Edge of the World“.
This listed site is an impressive and
unexpected natural
phenomenon : during the rainy
season a 25 metre high waterfall
gives you a feeling out of this
world. There is also a cave,
reserved for only the most highlyexperienced explorers, and a
walk around the cirque is a must.
Built on a one-km long stretch of
cliffs 30 to 40 metres high, Cormotle-Grand is an excellent place to
go rock climbing. Many famous
mountain guides have trained
here, among them Couttet, Cousy,
Rebuffat, Yves Seigneur and Lionel
Terray. Amateurs you have been
warned !

Le Mont de Sène
The Mont de Sène is unique in
more ways than one. On its
summit, three crosses have
been erected, and it also goes
by the name “Montagne des
Trois Croix“.
At 521 metres above sea-level,
it provides a magnificent
viewpoint, as well as being an
excellent place for walking.
This mound, partly natural,
partly man-made, was built
on the boundary of Santenay
and Dezize. Its name clearly
evokes a meeting place for
religious or civic festivals in
Gallic times.
From prehistoric times to the
Roman occupation, the Mont
de Sène served as a burial
ground, and many remains
have been found here. It is
accessible by car via Dezize-

footpath from Santenay-le-Haut.
On reaching the summit, walkers get a
magnificent full-circle panorama : to
the North, the famous vineyards
beyond la Rochepot ; to the East, the
Saône valley, the Jura and the Alps ; to
the South, the region of Cluny
dominated by the Mont Saint-Vincent
and, to the West, out over the Morvan.

The growth of the attractive
village of Santenay has largely
taken place over the course of
this century, in agriculture and
wine-making, but also in the
exploitation of nature’s reserves
thanks to the existence of a
thermal spring.
Mixing wine and water, but not in
the same glass : such is the wager
which this little Burgundy town has
made and won.
The water from the thermal spring
is pleasant and beneficial. As its
name suggests, the water is salty
and, as legend has it, is used by
the inhabitants of Santenay to
make soup. Rich in lithium, it is
recommended for the treatment
of rheumatism and gout. The
thermal spa of Santenay has been
classed a climatic and hydro
mineral health resort since 1968.
As for wine, the vineyards of
Santenay produce some very
remarkable examples.
The reds are mellow but invigorating,
and age well, with aromas of
strawberry and almond.
The generous whites come from
a single hectare of vineyard and
are considered among the best
in Burgundy.

The Casino dates from the end
of the 19th century. At the time

Chassagne-Montrachet is not
just renowned for its wines. Its
fame also results from its
quarries where the stone
known as Chassagne is
extracted.
The inhabitants of the village
first began quarrying the
world-famous stone two
centuries ago to build their
homes.
From the 1940s onward, the
development of this activity
reached such great proportions
as to provide a livelihood for
several families.
Since the 1960s, the
exploitation of the quarries
has become more industrial,
and the complete cycle of
production is represented,
from cutting the rock to
carving the stone for a wide
range of products such as
paving stones and indoor or
outdoor ornaments.

the grain and cut from a template
before being left to dry for two years.
The wooden slats are then assembled
and bent into shape. The casks are
burnt for differing lengths of time, to
give the wine a distinct taste according
to the preferences of each particular

At less than six kilometres southeast
of Beaune you can take in the air of
Sainte-Marie-la-Blanche, a village
with an enigmatic name, whose
streets and alleys are lined by trees
and flowers.
Adding a somewhat romantic touch,
the two lakes of Sainte-Marie-laBlanche invite you to have your
picnic or, for the more patient
among you, to fish.
If you would like to get active, make
sure you do not miss the forests of
Laborde and Sainte-Marie. The
more culturally interested among
you might want to visit the church
dating from the 14th century with its
extraordinary stone statue of the
“Christ of Pity“ from the 16th
century.
Wine in Sainte-Marie-la-Blanche …
A long story ! Vineyards used to
cover a large part of the land in the
18th century, but have grown
smaller ever since. They produce
very good wines though : vivid and
at the same time aromatic red
Burgundy, as well as fruity and very
delicate white Burgundy.
Ruffey-les-Beaune is situated just 5
kilometres from Beaune, and lies
slightly off the straight road leading
to Seurre and the Saône plain. The
village and its three outlying
hamlets (Varennes to the north,
Travoisy to the south and
Grandchamps to the south-east)
offer a warm welcome to visitors.
People are first attracted to Ruffeyles-Beaune for its picturesque
charm; they come back for its
warm and friendly inhabitants.
