VENDANGES Manuelles, semi-tardives, issues d’un deuxième tri : les raisins ont profité au maximum du soleil d’automne DÉGUSTATION Ni un moelleux car plus riche en sucre et en arômes de fruits mûrs. Ni un liquoreux car plus aérien. Notes riches de grande maturité : poire, pomme, miel. Jeune il se révèle à la fois suave et frais. Plus âgé, il évolue en nectar voluptueux et miellé. GARDE A boire mais se conserve 5 ans et plus. ACCORDS Servir entre 10 et 12°C à l’apéritif, avec du foie gras mi- cuit, une tarte aux pommes ou aux poires, des desserts de fruits cuits. A découvrir avec du roquefort. HARVESTING Hand-harvested from a second selective picking: The grapes have taken full advantage of the autumn sun and have a full and rich aromatic expression. VINIFICATION Pressed without crushing. Slow fermentation at 16 °C of the first musts. When the fermentation begins to slow, with about 70 g/l of residual sugar. The fermentation is stopped by tangential filtration which lessens the use of Sulphur. AGEING Bottled at the end of spring with optimum conditions of hygiene for perfect bottle-ageing. TASTING NOTES Neither dry nor too sweet. Rich, ripe fruit aromas with notes of pear, apple and honey. Drunk young, it is suave and fresh in structure. With bottle-age, it develops into a voluptuous, honeyed nectar. CELLARING POTENTIAL Can be drunk young, or kept for 5 years or more.. FOOD PARINGS Serve between 10 and 12°C as an aperitif, with “foie gras”, apple and pear tart, stewed fruits. Try also with Roquefort cheese.
