 SOCIÉTÉ MONDIALE DU VIN OPERATING MANUAL Société Mondiale Du Vin Page 1 Société Mondiale du Vin Induction Purpose The Société Mondiale du Vin is designed to provide an organization within the Chaîne des Rôtisseurs that specializes in the appreciation of wine and other crafted beverages. The Société encourages the collection and dissemination of information on wines and quality spirits as well as the enjoyment, understanding and procurement of fine beverages. The Société provides a means for mutual sharing amount those who appreciate fine beverages as part of the Chaîne dining experience as well as recognition for those professionals who are beverage oriented. Membership The Société Mondiale du Vin is composed of Chaîne members in good standing who are professionally involved in the wine and spirits industry or are amateur connoisseurs with a special knowledge or interest in wine and crafted beverages and who are dedicated to promoting the education and enjoyment of them as a vital part of the dining experience. Candidates for membership must be sponsored by a member of the Société Mondiale du Vin in good standing. The proposed members’ application must be approved by the member’s chapter Bailli, The Bailli Provincial or a national officer of the Société Mondiale du Vin. Separate Mondiale application forms are available from the National Office. Candidates are entered in the membership rolls upon receipt in the National Office of their approved application form and proper payment. New members are formally inducted and receive their decoration and certificate a separate Société Mondiale du Vin inductions organized from time to time nationally and with in each region. Société Mondiale Du Vin Page 2 Positions and Ranks of the Société Mondiale du Vin Consul General Société Mondiale du Vin who is the Bailli Délégué des Etats‐Unis has ultimate executive responsibility of the Société Mondiale du Vin Grand Echanson des Etats‐Unis shall organize, coordinate and administer the activities of Société Mondiale du Vin within the Society at the direction of the Board of Directors and the Bailli Délégué (acting in his/her capacity as Consul General, Société Mondiale du Vin). He/She shall serve at the pleasure of the Bailli Délégué provided, however, the incumbent's term shall automatically expire upon that of the appointing Bailli Délégué. Vice Echanson des Missions et Programs, Société Mondiale du Vin serves as assistant to the Grand Echanson des Etats‐Unis and acts as Vice Chair of the Société Mondiale du Vin Committee. His/Her primary responsibility shall be to increase the membership of the Société and such other duties as may be assigned by the Grand Echanson des Etats‐Unis, Société Mondiale du Vin and/or the Bailli Délégué. Vice Echanson des Jeunes Sommeliers, Société Mondiale du Vin serves as assistant to the Grand Echanson des Etats‐Unis and acts as Vice Chair of the Société Mondiale du Vin Committee if the Vice Echanson des Missions et Programs is unavailable. His/Her primary responsibility shall be to assist in the organization, planning and execution of the Young Sommelier competition and such other duties as may be assigned by the Grand Echanson des Etats‐Unis, Société Mondiale du Vin and/or the Bailli Délégué. Echanson Provinciaux serve as assistants to the Grand Echanson. They are appointed by the Bailli Délégué in his capacity as Consul General, Société Mondiale du Vin, upon the recommendation of the Grand Echanson, and having been nominated by the pertinent Bailli Provincial and serve at the pleasure of the Bailli Délégué or one year, whichever is less. In their capacity as Echanson Provincial, they shall report to both their Bailli Provincial and the Grand Echanson des Etats‐Unis and the scope of their duties are as they may be delegated from time to time by the Grand Echanson des Etats‐Unis in addition to any administrative duties and/or authority as may be assigned to them by their respective Baillis Provinciaux in the activities and operations of their Region Conseiller Société Mondiale du Vin who is the local Bailli serves as and is responsible for the Société activities within the Bailliage. Vice Echanson is a local Bailliage Officer who assists the Conseiller Société Mondiale du Vin with local Société functions and has responsibility for selecting wines for the Bailliage dinners and other events as well as planning the Annual Société Mondiale du Vin Dinner. This Officer has administrative responsibility for the wine cellar, if any. Professional du Vin is a member of the Société Mondiale du Vin who is directly involved in viticulture, producing wine or spirits, or the sale and distribution of such products. Chevalier de Société is a male member of the Société Mondiale du Vin. Gustato Optimorum = ”Those who see the best” Quot estis in convivio = “So many as are in the feast” Société Mondiale Du Vin Page 4 Induction Outline The induction area should be set in advance, utilizing normal stage effects of raised dais lighting, etc. Rehearsal essential. The ranking officer of the Société present assigns others to their parts. At the appropriate time, the procession will enter the room. Candidates are seated forward. Each candidate will have a sponsor present. The Procession (in order): 1. Standard Bearers. Two to place Société standards on stage, one to carry a tray with decorations. 2. Mondiale Officers. Any officers with a robe, not taking part in the ceremony, are invited to join the procession and take up positions left and right of the standard bearers. 3. The Bookman. The officer who carries up the Société Mondiale du Vin Livre d’or (Gold Page) and organizes the signatures and presents the certificates. 4. The Pourer‐Decorator. The officer who will carry the bottle for the toast, supervise the pouring into glasses for the toast and present the decorations. May use assistants. 5. The Vine Bearer. The officer who brings the vine and holds it until the presiding officer inducts. 6. The Presiding Officer (Inducting Officer). The officer who leads the induction Ceremony. 7. The Presenter. The officer who will call the candidates and ensure everyone is in proper place. Société Mondiale Du Vin Page 5 The Ceremony
INDUCTING OFFICER: Good evening, ladies and gentleman. Introduce officers & assistants, Give appropriate remarks INDUCTING OFFICER: "Will those to be inducted please come forward?" (After arranging everyone in appropriate position, name is read, then sponsor who says something about candidate. Example: "Mr. William Smith sponsored by Mr. Joseph Brown." Sponsor: "Mr. Bill Smith is the owner of a vast cellar and a good judge of wine") INDUCTING OFFICER: "I do hereby recognize these candidates. Please serve the nominees." A glass for each candidate and officer is organized. INDUCTING OFFICER: "Will the candidates join us in the loyal toast? …The toast shall be our pledge to the enlightened discernment and full enjoyment of fine beverages in moderation. Such fine beverages do bind together friends and enhance the occasion of good food and good fellowship. We drink to La Chaîne des Rôtisseurs and to the Société Mondiale du Vin.….The toast is: Vive la Chaîne!" ALL: "Vive la Chaîne!" ASSISTANT: "Vive the Société!" ALL: "Vive the Société!" (The glasses are collected. The bearer readies the vine. The Pourer/Decorator readies the decorations. The Bookman readies the book and certificates.) The Pledge INDUCTING OFFICER: "We will now administer the pledge of the Société." INDUCTING OFFICER: "Candidates, will you strive to enhance your enjoyment of fine beverages through the application of a discerning palate and through the earnest pursuit of variety and excellence in wine and other libations of quality?" CANDIDATES: "We will!" INDUCTING OFFICER: "And will you always enjoy these beverages in moderation with good food and in good fellowship?" Société Mondiale Du Vin Page 6 CANDIDATES: "We will!" INDUCTING OFFICER: "Fellow members of La Chaîne! Will you support these candidates in the pledge they hereby undertake?" ALL: "We will!" INDUCTING OFFICER: "You who enter our Société solemnly commit yourselves to drink thoughtfully, to brotherhood and to respect for your fellow members." "Nothing is more worthy to bear witness to this engagement than this venerable stock. For decades it has swayed in the wind, braved storms, groaned under the rough ice of winter. It has won out over all adversity, welcoming each spring the sunshine of a new vintage. It has resolutely pushed roots into soil, breaking through rocks, seeking out the rare substances that give flavor to its fruit. Autumn arrives; it has offered the world the gift of endeavor. This old vine stock represents all ‐ tradition, vigor, dedication, love." "Other vines have now taken its place, assured by your oath of finding devoted souls that will appreciate and understand the great effort of the vine." (Presenter brings each candidate to the Presiding Officer and mentions their name.) (As the Presiding Officer taps each candidate on the shoulder he/she says:) INDUCTING OFFICER: "I welcome you into the Société Mondiale du Vin." (The Presiding Officer hands back the vine to the Bearer and gives the new member the fraternal greeting.) (Pourer/Decorator presents each candidate the decoration and gives the candidate the fraternal greeting.) (The Bookman then supervises the signing of the Golden Pages and presents the certificate to the new member.)
