WINES BY THE GLASS The fundamentals of Thai cuisine can create some of the most challenging food pairings with wine. Thai food has an intensity of flavor with its use of highly aromatic botanicals, coconut milk, bitter herbs, spicy chilies, fish sauce, and dark soy sauces. The cuisine merits itself on the success of balancing these elements to make a dish that engages all five senses at once. A poorly chosen wine can disrupt that balance and make our food taste intensely sweet, sour, salty, or bitter. Here at Mai Thai, we have taken great lengths to ensure that every wine on our list will enhance your dining experience. Some wines pair better with certain dishes, but feel free to order any of these wines with anything on our dinner menu. WHITES 5oz Chardonnay Chehalem “INOX” Willamette Valley AVA, Oregon 2014 9 32 Crisp, but full-bodied, this unoaked chardonnay, brimming with pineapple, tangerine, apples and pears, with notes of honeysuckle and wet stone, is a compliment to any of our curries, but it plays perfectly with our savory brown sauces in dishes like the Thai Basil stir-fry or the Drunken Fried Rice or Noodles. Chardonnay Foxglove Central Coast, California, 2014 9 33 Foxglove is the brainchild of brilliant winemaker Bob Varner, who is renowned for the Varner wines he crafts with his brother. This Chardonnay is sourced from Edna Valley, a small wine region located close roduce a well-balanced, mineral-driven, beautifully complex wine. Enjoy this wine with our Kai Yang Chicken or our Crispy Green Beans Appetizer. Pinot Gris Lemelson Vineyards ”Tikka’s Run” Willamette Valley AVA, Oregon 2014 9 32 Champagne mango, ripe yellow peach, and lemon curd are held in balance by bright acidity and accompanied by a lively bouquet of jasmine flowers, lemongrass, and Kaffir lime leaf. The aromatics and acidity of this wine stand out with our richer fare such as Tom Kah soup or the Swimming Angel. Riesling Coiled Snake River Valley, Dry, Idaho 2015 8 28 An undisputed champ—a natural—with Thai cuisine, Idaho’s Coiled dry riesling is a go-to with anything on our menu. The wine undulates with tropical fruits such as lychee, mango, and pineapple, fresh floral aromas of lavender and jasmine, and Thai herbs like lemongrass and galangal. Our Thai Beef salad, complex and intense, is one of the most difficult dishes to pair with, but in this wine it’s met its match. Riesling Mönchhof Mosel QbA, Off-Dry, Germany 2015 8 28 Like spicy food? This wine does. Drink this with our spicier curries such as the Red or Green, or have it with any dish that you have made to fiery or authentic heat levels. Rainbow papaya, lychee, pineapple, and peaches are adorned by elderflower yet kept in check by petrol and chalk. The wine’s high level of acidity is contrapuntal to its residual sugar, a precise tension rarely found in off dry rieslings produced outside of Germany. Riesling /Gewurztraminer Gerfeffling Split Rail Winery Snake River AVA, Idaho 2014 9 30 A golden libation with floral hues of Riesling and stoney gardens of Gewürztraminer. Dashes of pepper and baking spice such as clove and allspice abound. Our Thai Beef or Papaya Salads, complex and intense, are two of the more difficult dishes to pair with, but in this wine they have met their match. Sauvignon Blanc Spy Valley Marlborough, New Zealand 2015 9 32 Tropical fruits and floral notes abound in this wine: pineapple, passionfruit, lychee, jasmine flowers and rose petals. But this wine has a strong undercurrent of grapefruit and freshly-cut grass giving it a refreshing finish on the palate. Enjoy our Tom Yum Soup or the Green Curry as their herbaceous and citric notes really shine when paired with this wine. -4- REDS 5oz Cabernet Sauvignon Telaya Boushey Vineyard Yakima Valley AVA, Washington 20141038 A sparing partner at best, the tannic structure and power of Cabernet Sauvignon typically precludes it from any serious consideration for Thai cuisine. However, local winery, Telaya, has produced a wine with supple tannins, bursting with ripe fruits such as plum, blueberry, raspberry and dates. The nose of this wine exudes vanilla, cocoa, tobacco and cedar. A great match for our savory, buttery Pad Se Ew Noodles and, if you like spicy, a surprising, adventurous partner to our Panang curry. Los Cardos Malbec Medoza, Argentina 2015 828 This wine makes an entrance with a massive concentration of black peppered fruit, cherry crush, sloe fruit and loads of licorice-laden berries. The acidity is striking. It creates a great melange with the fruit and the tannins through the midpalate, thereby giving the wine a powerful backbone and a good sense of balance. It carries through to the finish that lingers for a good 20-plus seconds with hints of toast, coffee and anise. This wine embraces our more savory sauces, especially the Thai Basil Stir Fry or Drunken Noodles drawing out the anise-like accents of Thai Basil. Merlot blend Beauregard Figeac “Tellus Vinea” Bordeaux, France 20141038 Hand-harvested from vineyards that border the Lalande de Pomerol appellation, cold macerated and aged in stainless steel and cement vats. Perfectly balanced and structured Merlot, boosted by Cabernet Franc, with dark fruits, graphite and spice. A tasty and satisfying Bordeaux. Pinot Noir Vinacola Botter “Avanti” Delle Venezie IGT, Italy 2013 828 If there’s ever a red wine meant for our Curries, it’s this one!. Lighter-bodied with bright red cherry, raspberry, and cranberry, this pinot noir is delicately accented by notes of tarragon, mushroom, and black tea. It’s a safe bet for almost any dish on our menu, but it’s exceptionally good with Pad Thai. Tempranillo Campellares Rioja DOCa, Joven, Spain 2014 828 A higher acid, medium bodied wine brimming with red and black cherry, raspberry, and pluot in addition to notes of baked earth and black pepper. This wine highlights the cinnamon and star anise found within our Mussaman Curry and its acidity and red fruit play beautifully with the intense umame undertones of our Thai Beef salad. Syrah/Grenache/Mourvedre Horned Beast Split Rail Winery Snake River AVA, Idaho1036 Rhone-style red blend of 83% Syrah, 8% Grenache, 9% Mourvedre. It’s all fresh berry cobbler, crushed flower, stone & Earth, brimstone & thunder. It’s muscularly genial. The spice and weight in this wine lend itself perfectly to our Drunken Noodles or Beef Peppersteak. ROSÉ 5oz Cinsault Rosé Villa de Anges Vin de Pays d’Oc, France 2015 8 28 As an aperitif it is the perfect warm weather gulper and also pairs exceptionally well with sushi, salads, and our Kai Yang Chicken. Gris de Gris Rosé Domaine Fontsainte Corbieres AOC, France 2015 Expressive and particularly tonic, the wine immediately gives off notes of raspberry, cherry and freshly picked strawberries - followed by exotic aromas such as pineapple and mango. However on the palate this wine is bone dry with admirable acidity and depth.
