He has been a research fellow of the Smithsonian Tropical Research Institute, a senior research scientist at the CNRS in France, and, in 1998, was nominated Professor at the Muséum National d’Histoire Naturelle, where his wife, Annette Hladik, is conducting botanical studies on plant species and foods available to primates in tropical forests. In the research results they have published together, they have emphasized the evolutionary importance of tubers of wild yams (Dioscorea spp.), because the energy available in the non-toxic and abundant forest yam species is probably the key factor that allowed the development of a large brain in Homo species. • Taste perception and possible changes in the food habits of obese persons As an emeritus research director, C.M. Hladik is at present working on taste responses among primates, including humans. He has contributed to build a team (Éco-Anthropologie et Ethnobiologie) that brings together anthropologists and primatologists in an interdisciplinary approach to the socio-cultural and environmental factors surrounding food perception. Recent results with obese children has demonstrated that taste threshold, a biological inherited factor, plays a major role in determining possible changes in food habits during a weight reduction session. Hladik - page 1 • Alimentation des primates, ignames et cerveau humain Claude Marcel HLADIK (né à Paris en 1936) a étudié le régime alimentaire des primates — 38 espèces de prosimiens, de singes et d’anthropoïdes, suivies sur le terrain au cours d’une trentaine d’années — ainsi que la composition des substances disponibles dans leur environnement naturel. En 1998, après avoir été associé au Smithsonian Tropical Research Institute et engagé au CNRS, il est nommé professeur au Muséum National d’Histoire Naturelle (MNHN), où il travaille avec son épouse, Annette Hladik, botaniste spécialiste des forêts tropicales. Ensemble et avec d’autres collègues du MNHN, ils ont publié des travaux sur les aliments disponibles pour les primates (homme compris). Ces travaux portent, en particulier, sur les tubercules des ignames (Dioscorea spp.) dans les forêts tropicales africaines qui, par leur abondance, leur absence de toxicité et leur important apport calorique, furent vraisemblablement le facteur essentiel ayant permis le développement du cerveau des espèces du genre Homo. • La perception gustative et son implication dans l’obésité Actuellement directeur de recherche émérite dans une équipe groupant des anthropologues et des primatologues (Éco-Anthropologie et Ethnobiologie, sous la direction de Serge Bahuchet) dont il a contribué à la formation, C.M. Hladik se consacre, avec ses collègues, aux études sur la perception des aliments par l’homme et les autres primates, dans une approche à l’interface des sciences biologiques et des sciences humaines. Les derniers travaux dans ce domaine ont porté sur la perception des aliments par des enfants obèses dont il est apparu comme essentiel d’évaluer les seuils psychophysiques des perceptions gustatives pour déterminer les perspectives d’amélioration du comportement alimentaire par une cure adaptée. Hladik also discussed recent data on primate taste perception in light of the evidence presented by Richard Wrangham for the use of fire in the cooking of various foods having occurred as early as Homo ergaster. Using salt as the first additive for improving the taste of cooked foods is also likely to be an early discovery by the Homo species, probably preceding Homo sapiens. However, the ability to perceive salts occurred during vertebrate evolution before primate taste ability coevolved with the sweet fruits of angiosperms during the Cenozoic. Salt concentration in foods available to wild primates is totally undetectable. Hence, salt perception did not result from recent selective pressures. Nevertheless, the fortuitous discovery of such a ‘non-food’ as salt for improving the taste of foods has been an important step in the history of human adaptation to varied diets. • Biocultural interactions in food preferences C.M. Hladik has conducted field studies on human food choices and food perceptions in the context of the pluridisciplinary team that he co-directed, until 1998, with Igor de Garine, a specialist in the anthropology of food. They and their team carried out field studies in tropical Africa, where natural food resources had been previously quantified and analysed. The results of such studies on the interface between social sciences and biology were discussed and published in the UNESCO Book Tropical Forests, People and Food (Mab Series 13) after the International Symposium chaired by C.M. Le symposium de 2009 sur l’évolution des régimes alimentaires humains (The Evolution of Human Diets, AAAS, Chicago) a été l’occasion de revenir sur l’ensemble des données de terrain de C.M. Hladik à propos du régime alimentaire des primates en relation avec la morphologie du tractus digestif. Ces observations avaient permis de définir l’homme comme initialement adapté à un régime frugivore et flexible relativement comparable à celui du chimpanzé, qui peut éventuellement inclure de la viande mais qui est essentiellement basé sur les apports des fruits et des graines. Les perceptions gustatives des primates résultent d’une co-évolution, au cours de l’Ère Tertiaire, avec les angiospermes — les plantes à fleurs produisant des fruits sucrés — avec une adaptation et une préférence pour les goûts des sucres qui, dans le contexte des sociétés industrialisées, peut entraîner vers l’obésité. Toutefois l’environnement gustatif des primates (y compris celui des premiers humains) se caractérise surtout par l’astringence des tannins qui protègent les espèces végétales (et leurs fruits avant maturation) ainsi que les amertumes de nombreux produits potentiellement toxiques. Les thèses de plusieurs chercheurs dirigés par C.M. Hladik ont permis de préciser les adaptations des primates à différents milieux, les variations de leurs acuité gustative et même de découvrir, après mise en évidence des « faux sucres » dans les fruits de certaines espèces des forêts tropicales africaines, un phénomène de « mimétisme biochimique » des plantes en réponse aux adaptations du système gustatif des primates. Dans le cadre de ce symposium AAAS-2009 où Richard Wrangham a repris une argumentation sur un usage du feu pour la cuisson des aliments qui pourrait remonter à Homo ergaster, l’usage du sel comme premier «exhausteur de goû» a été présenté par C.M. Hladik comme une possibilité également très ancienne dans l’histoire des espèces du genre Homo qui nous ont précédé, en fonction des études récentes des systèmes de perception gustative et de leur évolution chez l’ensemble des primates incluant l’homme. Car la perception des sels — dont celle du chlorure de sodium, en trop faible quantité pour être perçu dans les aliments naturels — ne correspond en rien à une co-évolution adaptative comme celle qui ont permis aux primates de percevoir les sucres des fruits des angiospermes. Le sel n’est pas un aliment, comme cela est démontré dans un récent ouvrage collectif, mais la découverte de ses propriétés organoleptiques fut, sans nul doute, vécue par nos ancêtres comme un extraordinaire progrès dans la préparation des aliments. • Interactions bioculturelles dans les préférences alimentaires C.M. Hladik a pris part aux études de terrain sur l’alimentation des populations humaines en équilibre de subsistance, réalisées en Afrique tropicale, dans le cadre de l’équipe pluridisciplinaire qu’il a co-dirigé, jusqu’en 1998, avec Igor de Garine, spécialiste de l’anthropologie de l’alimentation. Ces études de terrain ont porté sur des régions forestières d’Afrique tropicale où les ressources alimentaires avaient été déterminées et mesurées. Les résultats de ces recherches à l’interface des sciences biologiques et du contexte socioculturel furent discutés et publiés dans l’ouvrage de l’UNESCO (Tropical Forest, People and Food) qui a suivi le symposium international organisé par C.M. Hladik et ses collaborateurs. La version française en deux volumes, publiée par la suite, a permis une plus large participation des experts internationaux et, grâce à un financement du Ministère de la Coopération, de diffuser largement dans les universités des pays francophones cette approche exhaustive de l’utilisation des ressources des régions forestières tropicales. Sponheimer and P. Ungar), C.M. Hladik emphasized the original data he had gathered on primate natural diets in relation to gut morphology. In it he demonstrated that the human digestive tract is basically that of a frugivore, with a flexibility paralleling the diet of the chimpanzee, including eventually small amounts of meat, but mostly fruit and seeds. Primate gustatory perceptions resulted from co-evolution of primate species with angiosperms bearing sweet fruits during the Cenozoic. The perception of sugars, and the inherited preferences for those carbohydrates may lead to obesity in the context of affluent societies. However, the gustatory environment where primates (including early humans) evolved is mostly composed of tannin tastes (tannins protect many plant species and their fruits before maturation), and of the bitter tastes of several potentially toxic natural compounds. The research conducted, and the resultant theses written by students under the direction of C.M. Hladik has contributed to our understanding of variations in taste responses within various environments where primates have to cope with these chemicals. Part of these researches, conducted in African rainforests in collaboration with colleagues of Winsconsin University, have focused on ‘false sugars’ (various chemicals tasting like sugar to primates). They have shown that ‘biochemical mimicry’ had evolved in plants species in response to primate taste perception. Hladik with the team ‘Eco-Anthropologie et Etnobiologie’, and/ or in collaboration with scientists located in universities of developing countries, have focused on biodiversity and the sustainable development of food resources. In Madagascar, where such research programs are in progress within natural reserves of contrasted environments, studies have been conducted on endemic yam species (the genus Dioscorea, previously shown to have played a significant role in human evolution on the African Continent). The adaptive radiation of diverse yam species within Madagascar has also been studied, and their present status as food resources has been evaluated. General considerations on radiative evolutionary trends on continental blocs vs islands of various size (including Madagascar) have been presented in the review of E.G. Leigh (Smithsonian Tropical Research Institute) co-authored by C.M. Hladik. Les recherches de C.M. Hladik, menées et publiées en dans le cadre de l’équipe “ÉcoAnthropologie et Ethnobiologie” avec des chercheurs des universités de pays émergents, portent sur la gestion de la biodiversité et sur l’utilisation durable des ressources alimentaires. Ainsi, à Madagascar, où se poursuivent les travaux dans les réserves de milieux très contrastés, des études ont porté sur les ignames endémiques — le genre Dioscorea, dont nous avions montré toute l’importance pour l’évolution de l’homme en Afrique. À Madagascar, ces espèces qui sont un exemple d’évolution radiative, constituent un potentiel de ressources alimentaires mis en évidence au cours de nos derniers programmes. Les grandes tendances de l’évolution ont été mises en perspective dans une revue en collaboration avec E.G. Leigh (Smithsonian Tropical Research Institute), en comparant les blocs continentaux et les îles de différentes tailles (dont Madagascar). In conclusion, it should be emphasized that the approach followed by a research team that incorporates both, social anthropologists and biologists, has allowed a deeper understanding that previously possible of the socio-cultural parameters, including religious beliefs and traditions that have played, and continue to do so, a major role in the sustainable utilisation of the environment.
