A third of the grapes are fermented in Transylvanian oak barrels, the rest in small stainless steel tanks, no malolactic fermentation is carried out to maintain the wine's freshness, the wine is lees-aged for about three months. The palate shows richness yet finishes fresh and vibrant, shows notes of dried, ripe white fruits and oak spice. 1210 Sauvignon Blanc, Cakebread Cellars, Napa Valley, USA 2014 £83.00 Cakebread Cellars make high quality wines from vineyards all over the Napa Valley. They blend a tiny amount of Semillon and Sauvignon Musque to their Sauvignon Blanc, for complexity and spice. Round and fleshy for its type, this wine shows notes of citrus, stone fruit and gooseberries. Red 2609 Rioja, Bodegas Coral, Don Jacobo Crianza, La rioja, Spain 2010 £38.00 A traditional red Rioja very much in Bodegas Corral’s style, matured for a minimum of 12 months in American oak followed by at least a year in bottle before release. A blend of 90% Tempranillo with small additions of Garnacha and Mazuelo varieties 2900 Cab. Sauvignon, Kleine Zalze ‘Reserve’, Stellenbosch, South Africa 2008 £79.00 Waves of deep-piled forest fruit, vegetative and gamey notes on the nose which is a typical expression of the fruit from this selected Cabernet Sauvignon block. The 2008 vintage is a vintage of concentration and this wine has a great length on the palate with alluring combination of blackberry fruit. This wine shows pure grape savoury fruit with a firm white cedar oak tannin finish that delivers a long lingering after taste. 1 Wines by the glass Champagne & Sparkling 125ml Chapel Down ‘Brut’, Kent, England NV £10.00 Perrier-Jouët ‘Grand Brut’, Champagne, France NV Perrier-Jouët ‘Blason Rosé’, Brut, Champagne, France NV Ruinart ‘Blanc de Blanc’, Brut, Champagne, France NV Perrier-Jouët ‘La Belle Epoque’, Brut, Champagne, France 2007 £12.00 £15.00 £22.00 £24.50 Fine wines by the glass Served with the revolutionary Coravin system White 125ml Sauvignon Blanc, Cakebread Cellars, Napa Valley, USA 2014 Condrieu, Clusel-Roch ‘Verchery’, Rhône Valley, France 2011 £15.00 £16.00 Red 125ml Cabernet Sauvignon, Kleine Zalze ‘Reserve’, Stellenbosch, South Africa 2008 Saint Estèphe, Château de Pez, Bordeaux, France 2009 Gevrey Chambertin, Philippe Roty ‘Champs Chenys’, Burgundy, France 2009 Chateauneuf-du-Pape, Domaine de Ferrand, Rhône Valley, France 2007 £14.50 £16.00 £22.50 £23.00 2 Wine to me is something that brings people together. Wine does promote conversation and promote civility, but it's also fascinating. It's the greatest subject to study. No matter how much you learn, every vintage is going to come at you with different factors that make you have to think again. -Robert M.
