True Champagne is produced only in the Champagne region of France using the Methode Champenoise, which involves a second fermentation in the bottle. Three grape varietals are used in the process (either individually or various blends): Chardonnay, Pinot Noir and Pinot Meunier. The toasty, buttery and well ... bubbly result is worthy of the its reputation. Other regions and countries produce delicious and high-quality sparkling wines using the second fermentation method, and we have brought together offerings that will complement a broad range of our menu items. Most rose is produced in one of two ways: Maceration: in which red grapes are crushed and the clear juice is left on the skins for a period of time; or Saignee (Bleeding): in which pink juice made from red wine production is separated (or bled) from the crushed grapes during the process. Roses can be made from any grape varietal that gives them the flexibility to go from simple and light to structured and rich; enjoy these wines with cheese or seafood dishes. Ask one out with your chicken or your tuna; even a salmon would be pleased to make their acquaintance. Cool and thoughtful with a lot going on, they throw off lots of earthiness and dark fruits mixed with tannin. Drink a cabernet, a merlot, a shiraz ... make sure there's red meat and sometimes chocolate when there's some left in the glass.
