This rare and renowned Taiwanese tea is a real gastronomic
experience. It is made from tea leaves infested by a small
leafhopper called Paoli, whose bite triggers oxidation of the
leaves and results in a unique aroma of wood, ripe fruits, honey
and champagne.
This silver needles tea, adorned by a sumptuous down, boast a
beauty which equals that of the fresh jasmine liquor which they
impart. This rare example combines the finesse of a fine white
tea with the sweet flavour of jasmine.
Thé noir
Ce thé rare, emblématique de Taïwan, constitue une expérience
gastronomique unique. Sous l’effet de la morsure d’une
minuscule sauterelle, le paoli, une oxydation s’initie dans les
feuilles et donne lieu à une saveur surprenante, mêlant boisé,
fruits murs, miel et champagne.

This tea is cultivated on the banks of Lac Taiping. One of the
most exclusive Chinese tea. Its long and spectacular leaves are
pressed before being dried. Their infusion gives a liquor of clear
green, carrying a vegetable aroma.
Ce thé est cultivé sur les bords du lac Taiping. Il est probablement
le thé chinois le plus exclusif. Ses longues feuilles spectaculaires
sont pressées puis séchées. L’infusion d’un vert transparent
possède un parfum très végétal.

The Yunnan province produces this delicate green tea. Such as
this example which gives a bright and yellow liquor. The infusion
exhibits green and fruity notes with an enduring finish.
La province de Yunnan récolte ce thé vert délicat.
Ses feuilles au vert sombre offrent une liqueur jaune clair,
corsée, et aux notes vertes et fruitées, longues en bouche.

One of this year’s Pu-Erh teas with large twisted leaves and a
relatively clear infusion. The liquor suggest note of undergrowth
chimney smoke and liquorice. This tea makes a great
accompaniment to reach meats and chocolate or caramel desserts.
