LA SÉRÉNITÉ AOC PESSAC LÉOGNAN The first ever vintage here was in 2001. La Sérénité is made according to the timehonoured Bordeaux tradition by the team of its famous neighbour, Château Pape Clément. This is one of the rare estates still to be found in the commune of Gradignan, where many vineyards disappeared due to urban expansion by the city of Bordeaux. WINE ESTATE OWNER Location: Gradignan. Area under vine: 2 hectares. Wine grape variety: 51% Merlot, 49% Cabernet Sauvignon. Age of vines: 26 years. Vine density: 8,333 vines per hectare. Terroir: Cabernet vines are planted on clay-gravel soil and Merlot vines on claylimestone soil on limestone bedrock. Viticulture: Traditional Bordeaux pruning method. Leaf thinning and green harvesting. Winemaking: The grapes are hand-picked into small crates, manually destemmed, and put uncrushed into small, wooden, 25-hectolitre vats by gravity flow. Pre-fermentation maceration. Manual punching down of the cap. The wine is run off directly via gravity flow into new French oak barrels for malolactic fermentation and ageing for 18 months. Yield: 15 to 25 hectolitres per hectare.
