SNACKS & DESSERTS
• Carrots with tahini
• Celery with almond butter
• Veggie sticks with dip and/or hummus
• Rice or corn cakes with avocado and tomato (can also add slices of
cucumber, lettuce, sprouts, spinach leaves, etc)
• Mary’s flax crackers (or corn or rice cakes) with dip or hummus – or a spread
• Lettuce leaf with pate or hummus and sprouts
• Rice or corn cake with avocado & pickles
• Trail mix (make your own with raw nuts and seeds & some dried fruit)
• Raw cauliflower with salt and nutritional yeast
• Organic popcorn with salt, coconut oil & nutritional yeast
Date With a Pecan
Take pit out of Medjool date
Press sticky part of date in flaked coconut to coat it
Place pecan on top of the date & coconut
Nut Butter & Banana Sandwich
Lettuce leaf
Almond butter
Medjool date (pit out)
Banana
Place lettuce leaf on plate
Spread some almond butter on middle of leaf
Top with thinly sliced medjool date (put in a row, end to end across center of leaf on nut butter)
To with thinly sliced banana pieces (do same as with medjool date)
Roll up leaf and enjoy! One of my favorite snacks

Chocolate Smoothie
1 C almond milk
3/4 C blueberries (or mix with other berries or fruit)
1/2-1 banana
1-2 soaked Medjool dates (soaked in hot water) or another sweetener (stevia, etc)
2 Tbsp cacao powder (raw chocolate powder)
1 tsp green powder (if you have)
Protein powder (optional)
1/2 C fresh greens such as spinach or kale (optional)
SESAME COCONUT NO-BAKE BARS
½ C sesame seeds
½ C flaked coconut
¼ C hemp seeds
2 Tbsp ground flax or whole flax
3-4 Tbsp maple syrup (or another sweetener)
¼ C currents (or raisins, or another dried fruit)
1 tsp vanilla
2 Tbsp coconut oil
¼ C tahini
Pinch of salt

To a bowl add the coconut, sesame seeds, hemp seeds, flax, salt, vanilla & currants
Stir to mix
Add tahini, coconut oil & sweetener – stir well to mix
Add parchment paper to cookie sheet, plate or on cutting board
Press the mixture about ½” thick (use web spatula for this)
Form into a square or rectangle
Place in freezer to set
RAW CHOCOLATE TRUFFLES
2 cups of nuts (I like a mix of pecans & walnuts)
7-8 Medjool Dates
4 Tbsp raw cacao powder
1/2 tsp vanilla
3 Tbsp ground flaked coconut – to roll the truffles in

Put nuts in food processor.
Grind them down as in video until fine.
Add dates and blend some more.
When mixture sticks together when you pinch it, add vanilla and cacao powder. Blend
until well mixed.

• Put mixture into bowl and take out enough to roll into a small ball. Roll mixture into a small
bowl and then roll into ground coconut.
• Do this with the rest of the mixture.
• Place the truffles on a plate or tray and place in freezer until they set. Once they set place
them in freezer bags.
CHOCOLATE PUDDING
(this is a small batch – you may want to double it)
1 large avocado - scoop out of skin
3-4 Tbsp agave or sweetener
1/4 - 1/2 tsp vanilla
1 Tbsp coconut oil (melted)
2 1/2 -3 Tbsp cacao powder
pinch of salt
In a food processor or bowl, add the avocado, agave and vanilla. Process or mash the mixture
together. You may need to double this recipe if you have a larger food processor
Add cacao powder, salt and melted coconut oil. Mix until creamy. Scrape sides of food processor
and stir mixture often as you are mixing.
Taste and adjust to taste. You may want more sweetener or more cacao powder or if you want it
creamier add a bit more coconut oil.
This will store in fridge for about 6 days. You can also freeze it in a container and it will last really
well.
BANANA MANGO DAIRY-FREE ICECREAM
1/2 C frozen bananas
1/2 C frozen mango (or mix)
1/2 tsp vanilla
2 or more Tbsp water.
NOTE: It works better if the fruit is cut into smaller pieces.
Add the above ingredients to a food processor along with 2 Tbsp of water.
Process, taking time to scrape the sides of the food processor and to stir mixture. Process until it
becomes smooth and creamy.
You may need to add a bit of water if it is not mixing that well.
Various Options:
Bananas and mangos are creamy so adding them along with any other frozen fruit would work. If
you use berry such as raspberries - it will turn out more like a sorbet and you will want to add
some sweetener.
