First line the bottom of the mold: Cut 6 to 8 ladyfingers (LF) in half crosswise then lengthwise to inside radius of mold (e.g. for 6” dia. mold, trim LF to 3” long). Trim each half to a V-shape (will resemble a daisy petal). Turn the mold upside down and arrange the shaped LF on the bottom to form a flower pattern. Then use a small round cookie cutter to cut out a circle in the center of the flower. Use the same cutter to cut a neat round piece from another LF and place it in the center of the flower (see Figure 1). Re-form the flower, rounded side facing down, in the bottom of the mold. Line the sides of the mold: square off one end of each LF, leaving them long enough to extend above the rim of the mold. If mold has slanted wall, trim the sides slightly wedge-shaped to fit tightly around the inside of the mold, rounded ends up, rounded sides outwards. Filling can ooze through cracks between LF. Mix the rum and water in a small bowl. Brush the LFs with the rum mixture, starting with the sides of the mold and then brushing the base. Put the pieces of chocolate and milk in a bain-marie and set it over simmering water. Let stand, without stirring, until the chocolate melts completely. Gradually whisk the softened butter into the melted chocolate. Remove from heat. Stir in the egg yolks one by one with a wooden spoon until well blended. Allow to cool. Beat the egg whites with a whisk or electric mixer until stiff peaks form, sifting in towards the end the powdered sugar. Whisk the heavy cream (very cold using cold implements) into a not too thick whipped cream. Fold whipped cream and egg whites into chocolate until perfectly homogeneous. 1. 2. 3. 4. 5. 6. 7. Beurrer légèrement un moule à charlotte et disposer dans le fond un rond de papier sulfurisé. Commencer par le fond du moule: trancher 6 à 8 biscuits à la cuiller dans l’épaisseur, puis réduire longueur à celle du rayon intérieur du moule (c.à.d. pour un moule de 15 cm de dia, longueur du biscuit sera 7.5 cm). Découper chaque moitié en forme de V (ou pétale de marguerite). Sur le dessous du moule, arranger les morceaux ainsi découpés en forme de fleur (voir Figure 1). Avec un petit emporte-pièce, découper un cercle au centre de la fleur. Avec le même outil découper un cercle dans un autre biscuit et le placer au centre de la fleur. Placer tout cet arrangement, côté bombé vers le bas, au fond du moule. Continuer avec les côtés du moule : enlever la partie arrondie d’un côté de chaque biscuit, s’assurant qu’ils restent assez longs pour dépasser le bord du moule. Si le moule n’est pas cylindrique, découper légèrement les bords des biscuits en biseau afin qu’ils couvrent étanchement l’intérieur du moule (côté bombé vers l’extérieur – voir Figure 2). Mélanger le rhum et l’eau dans un petit bol ; avec un pinceau saturer les biscuits, commençant avec les côtés, puis travailler le fond. Mettre à fondre le chocolat avec le lait dans un bain-marie. Le laisser fondre entièrement sans remuer. En maintenant la préparation au bain-marie ajouter peu à peu le beurre en petits morceaux tout en remuant. Retirer la casserole du feu et ajouter les jaunes d'œuf l'un après l'autre. Travailler la crème quelques instants jusqu'à ce qu'elle soit bien lisse et brillante. Laisser refroidir. Monter les blancs d'œuf en neige en ajoutant à la fin le sucre glace en pluie. Battre la crème liquide (très froide) en chantilly un peu molle. 9. Pour into the lined charlotte mold, up to the rim. Cover with a weighted dish; refrigerate until firm, 4 to 5 hours. 10. To serve, invert a platter over the charlotte. Quickly reverse the two and slide the charlotte mold off; remove paper from top. You can now decorate with some chocolate shavings or simply powdered cocoa. Serve the chilled crème anglaise in a sauceboat on the side. 8. Crème anglaise Crème anglaise Put the milk and vanilla into a heavy-bottomed saucepan and bring to a boil. Remove from heat. Combine the egg yolks and sugar in a heatproof bowl and whisk until thick and pale yellow (Fig. 2); the mixture should form a ribbon when the whisk is lifted from the bowl (Fig. 3). Battre les jaunes d’œufs et sucre dans un bol jusqu'à obtention d’un mélange épais et jaune-clair : il doit faire le ruban lorsque le fouet est retiré. (Voir Figure 3 ci-après) . Gradually whisk in half of the hot milk. Then whisk in the remaining milk and return the mixture to the saucepan. Cook over low heat, stirring constantly with a wooden spoon, until the custard is thick enough to leave a clear trail when a finger is drawn across the back of the spoon (Fig. 5). Instant thermometer should read 170⁰. Remove the custard from the heat and strain it into a bowl; let cool, stirring occasionally to prevent a skin from forming. Chill. Incorporer les deux préparations à la crème afin d'obtenir un mélange lisse et parfaitement homogène. 9. Remplir le moule avec la mousse au chocolat résultante en la tassant légèrement. Couvrir d'une assiette, un poids dessus et mettre au frigo 4-5 heures. 10. Pour servir retourner le moule sur le plat de service, retirer le fond de papier sulfurisé. Décorer de copeaux de chocolat ou la saupoudrer simplement d'un peu de cacao. Servir avec crème anglaise. Ajouter lentement la moitié du lait chaud en fouettant, puis le reste du lait ; remettre le mélange dans la casserole et chauffer sur feu doux, mélangeant sans cesse ave une cuiller en bois. La crème est prête lorsqu’elle est suffisamment épaisse pour laisser un tracé net lorsqu’on passe le doigt sur le dos de la cuiller (Fig. 5). Thermomètre instantané affiche 75⁰ C. Enlever du feu et, à l'aide d'une passoire verser le mélange dans un bol. Laisser refroidir, en remuant de temps à autre pour prévenir la formation d’une peau. Refroidir.
