Trophy of maître d’hôtel 2017 : the semi-finalists are disclosed !
The selection of the semi-finalists of the 1st Trophy of maître d’hôtel took place this monday, at the
Hôtel Plaza Athénée in Paris. 19 candidats were qualified for semi-finale, which will take place on
october 4th at the Albert de Mun Hight School in Paris, just before the finale, January 21st, as part of
the SIRHA 2017 at Lyon..
The Trophy of maître d’hôtel, which was enlightened by the Association French-style service and supervised by the MOF (the best French handcraft worker) Denis Férault, who wanted to honour the excellency of the professions of service and table arts. For this very first edition, the organisation comitee
have received 107 video application. This is a great success ! The selection just took place on July, at
the Hôtel Plaza Athénée in Paris. 19 were qualified :
- Alessio Risso (39 years old), 1st maître d’hôtel at Beau Rivage Hotel from Neuchâtel (Switzerland) ;
- Kévin Prouvé (28 ans), restaurant manager at Reflets by Pierre Gagnaire - Intercontinental Hotel Dubai Festival city (Dubaï) ;
- Jerôme Heller (28 ans), maître d’hôtel/sommelier at Le Sélys Restaurant, Liège (Belgium) ;
- Eric Merlet (48 ans), maître d’hôtel at l’Espadon Hôtel Ritz, Paris (France) ;
- Jonathan Brunet (33 ans), maître d’hôtel at Peninsula, Paris (France) ;
- François Calvez (32 ans), 1st maître d’hôtel/sommelier at Les Bories Hotel, Gordes (France) ;
- Sébastien Subtil (28 ans), maître d’hôtel at Pierre Gagnaire Restaurant, Paris (France) ;
- Geoffrey Gendarme (25 ans), maître d’hôtel at Domaine des Crayères Restaurant Le Parc, Reims
(France) ;
- Guillaume Bonnard (28 ans), assistant maître d’hôtel at La Côte Saint Jacques, Joigny (France) ;
- Guillaume Robert (29 ans), restaurant manager at Le Café Noir, Rennes (France) ;

The organisation comitee were very pleased about the rich and diversified participations, as well as
videos application which showed. France, Belgium, Switzerland… these qualified candidats, from differents countries, showed an actif interest for this 1st ediiton of Trophy of maître d’hôtel especially for its
international mission. .
« We are very satisfied because we discovered profiles from brasserie, traditional restaurants, gastronomy… They all demonstrated their passion for their profession. We are looking forward to more
female applicants in the following edition. The comitee of the Trophy of maître d’hôtel is impatient to
get together wich these semi-finalists on october 4th in Paris, around some innovating exams », added
the chairman, Mr Denis Férault.
On the way to the semi-finale : suggestions of co-presidents of
jury
Philippe Bourguignon, previous general director at Laurent Paris : « Besides the
upstream exercises, it’s essential to keep to oneself. The applicant should answer what
really happened at his workplace. The jury will judge the natural aspect »
François Pipala, restaurant manager at L’Auberge du pont de Collonges : «
The qualified candidats should first of all, be aware of the fundementals, and
keep to themselves. It is important not to become stressed and feel disturbed.
This could lead to memory lapse and improvised gestures »

About Association Service à la française…
This association according to law 1901 was founded in february 2015. It is consisted of enthusiastic defensers of united professions of service , around the same leitmotiv : increasing the value of
their sector. This association organize competitions which are dedicaced to active professionals
from all kinds of establishment of restaurants or hotel. It’s chaired by Denis Férault, the best French
handcraft worker as the maître d’hôtel.
