CHAMPAGNE & SPARKLING
Champagne has long been a symbol of celebration: from a big birthday to winning the World Series,
it also happens to be a fantastic wine to pair with food, and we encourage you to sip it throughout
your meal. True Champagne is produced only in the Champagne region of France using the Methode
Champenoise, which involves a second fermentation in the bottle. Three grape varietals are used in
the process (either individually or various blends): Chardonnay, Pinot Noir and Pinot Meunier. The
toasty, buttery and well ... bubbly result is worthy of the its reputation. Other regions and countries
produce delicious and high-quality sparkling wines using the second fermentation method, and we
have brought together offerings that will complement a broad range of our menu items.

ROSE
It has been years since Rose in the States meant a bottle of White Zinfandel, but in many ways these
versatile wines are still underappreciated. Most rose is produced in one of two ways: Maceration: in
which red grapes are crushed and the clear juice is left on the skins for a period of time; or Saignee
(Bleeding): in which pink juice made from red wine production is separated (or bled) from the
crushed grapes during the process. Roses can be made from any grape varietal that gives them the
flexibility to go from simple and light to structured and rich. Some of the finest roses come from the
regions of Provence and Southern Rhone, France, and are perfect pairings for foods similar to those
from their homes: cheese or seafood, lighter meat dishes ...

WHITE WINE

Just because these wines are easy don't take them for granted. They are fantastic as stand-alone
sipping wines, and their bright acid and crispness make them good friends of our steak tartare and
our roasted shrimp. While there are a range of varietals represented here, they all share acidity,
brightness and a refreshing drinkability. Taste for lime, grapefruit and freshly cut grass. While they
may be summertime in a bottle, they are very appropriate all year.

Don't let your nose deceive you … the fruit you breathe from the glass does not mean sweet; while
oak takes a backseat in these wines they can still be dry and muscular. Some of the varietals
represented here that do not see oak are chenin blanc, riesling and chardonnay. A sweet potato salad
with apple + endive or some vegetarian potato and herb gnocchi will match perfectly.

RED WINE

Reds don't always have to be so serious, but they do have to be well balanced. Gamay, dolcetto and
zweigelt (among others) start the party well, but are also comfortable hanging throughout the night.
Not too much tannin and forward fruit make them approachable and friendly. Ask one out with your
roasted rabbit or your tuna; even a salmon would be pleased to make their acquaintance.

These wines might not be the biggest, but they are the funkiest and also some of the most rewarding
to drink. Cool and thoughtful with a lot going on, they throw off lots of earthiness and dark fruits
mixed with tannin. Here we have Pinot Noir (the king), tempranillo, malbec and sangiovese, among
others.Did someone say braised short rib or ribeye with black garlic?

So these are the big dogs … in their best representations they are the wines by which all others are
judged. Sometimes they are just big bullies and giants that demand a huge plate of meat and
sometimes they are more (slightly more) subtle; which is not to say that they are not great. They are.
And they know it. And their new world counterparts have done wonders as well. Drink a cabernet, a
merlot, a shiraz ... make sure there's red meat and sometimes chocolate when there's some left in
the glass. These are big wines ... but also wines that can be surprisingly nimble and complex.
