True Champagne is produced only in the Champagne region of France using the Methode Champenoise, which involves a second fermentation in the bottle. Three grape varietals are used in the process (either individually or various blends): Chardonnay, Pinot Noir and Pinot Meunier. The toasty, buttery and well ... bubbly result is worthy of the its reputation. Most rose is produced in one of two ways: Maceration: in which red grapes are crushed and the clear juice is left on the skins for a period of time; or Saignee (Bleeding): in which pink juice made from red wine production is separated (or bled) from the crushed grapes during the process. Roses can be made from any grape varietal that gives them the flexibility to go from simple and light to structured and rich. They are fantastic as stand-alone sipping wines, and their bright acid and crispness make them good friends of our steak tartare and our roasted shrimp. While there are a range of varietals represented here, they all share acidity, brightness and a refreshing drinkability. Taste for lime, grapefruit and freshly cut grass. While they may be summertime in a bottle, they are very appropriate all year. Drink a cabernet, a merlot, a shiraz ... make sure there's red meat and sometimes chocolate when there's some left in the glass. These are big wines ... but also wines that can be surprisingly nimble and complex.
