generously within he harsh toledan climate.The care and
delicacy with which these trees are grown make it possible to
obtain fruits with high levels of polyphenols. The olives,
harvested just when they are on the best ripening moment, give
rise to a yellow-green juice.
When you open the bottle you’ll find a very complex, aromatic
oil which is robust, intense and persistent in the mouth. It has
aromas of leaf green, green bananas and even mint… a
multitude of identifiers in a diverse whole which make it a very
special olive oil.
