A new look for an old friend – La Pirogue
La Pirogue, the easy-going, tropical-style hotel on the West Coast of Mauritius, has undergone a transformation
which has added a stunning new pool overlooking the ocean, greater comfort in its guest rooms, many opening onto
private palm groves and the turquoise sea and completely redesigned restaurants featuring mouth-watering and
innovative island cuisine with airy dining pavilions as well as a new spacious lobby area.
La Pirogue is famed for its magnificent gardens and mature palm groves, overlooking Flic en Flac beach –
arguably the most beautiful stretch of sand on the island – and has long been popular with guests for its alfresco design
and relaxed atmosphere.
The challenge faced by designers was to retain the hotel’s charm while creating a more contemporary pool area,
and allowing as many people as possible to eat outside.
“We knew how much people loved the hotel as it was” explains Alistair Macbeth, of the architects RSL/Macbeth,
“but it’s important to keep things looking new and fresh. So we have kept all the essential shapes, such as the distinctive
main building which is formed like the local fishing boat known as a pirogue, and many of the textures – using Mauritian
thatch and volcanic stone – have been enhanced, not changed.”
At the same time, all the rooms, which have kept their thatched roofs and private terraces, have been redecorated
in light colours, using muted patterns and tropical furniture for a calm, yet cosy feeling.
“One of the biggest changes is the lobby area”, says Alistair Macbeth. “New arrivals now walk into a light-filled
entrance with fabulous views right through to the refurbished main restaurant, ‘Thatches’”, and the gardens and palm
trees beyond. Immediately they know they are on holiday in the tropics.”
Along with redesigned public areas of the hotel come changes to the hotel’s restaurants and menus. At Thatches,
the main restaurant, there is more of an emphasis on live cooking and Island Cuisine. Guests can also choose from a
variety of other cuisines, have fresh ingredients cooked in front of them, or combine different types of foods for different
courses.
Meanwhile, Paul and Virginie, La Pirogue’s intimate beachside restaurant, has become even more romantic.
Thatched dining pavilions extend over the new pool, which reflects the stars in the night sky, and new kitchens produce
dishes of fresh seafood, Mauritian specialities and trendy Asian wraps.
The first guests walked into the new-look hotel on November 1, 2003. Returning visitors will find an old friend
with a new style and charm – and the same easy, tropical ambience.

La Pirogue – laid-back tropical charm
La Pirogue, managed by One&Only Resorts and one of Mauritius’ most popular hotels, is the perfect place for
busy people who want to kick off their shoes and feel the sand between their toes.
This renowned first high-quality property uses indigenous palm-thatch and volcanic rock for its cottages and takes
its name from the elegant, deep-hulled local fishing boats known as a pirogue.
Its main building picks up the theme, with a half-dome facing out across the pool to the sea like a ship. The guest
cottages, set in discreet clusters deep in the gardens or facing the beach, are also shaped like upturned boats. The lobby
is calm and cool, leading through to restaurant, pool and the sea.
La Pirogue is on the west coast of the island and shares the magnificent Flic en Flac beach with its next door
neighbour, the Sugar Beach Resort. It has one of the most amazing views in Mauritius; the beach sweeps southwards
to the dramatic rock peninsula known as Le Morne, on the landward side is another spectacular ridge beside the Black
River Gorge, and the sea is a translucent, copper-sulphate blue.
The two hotels share sports and watersports facilities, a beauty centre and restaurants. Guests can move between
facilities on both properties – the perfect solution during an average two-week stay.
One of La Pirogue’s greatest charms, aside from the pristine beach, is its mature tropical gardens, 14 hectares
of it which combine immaculate gardens with legions of coconut palms and lush greenery. Guests needing a break from
the glare of the sea often stroll through the grounds, admiring the unfamiliar blooms or stopping for a round of mini-golf
under the trees. The gardens are also hugely popular with couples getting married, in a beautiful wedding gazebo
drenched in foliage.
One&Only Resorts (then Sun International) took over the resort in 1983 and immediately began a program of
enlargement and refurbishment; there are 246 Standard and Superior cottages and two Royal Suites, both of which have
been used by Royalty from the UK and Holland, as well as visiting Heads of State and the Mauritian government. In
2003, all the public areas of the hotel have been re-designed, while retaining their easygoing atmosphere, a new pool
area has been built beside the beach and bedrooms have benefited from a new, refreshing colour scheme.
All rooms at La Pirogue are ground-level and most open privately onto the magnificent palm grove and the Indian
Ocean. Standard rooms are two to a cottage, with cool floors, airy ceilings, bathrooms with separate showers, and floor
to ceiling French windows and balconies, separated from the adjoining room by a trellis and lush plants. Most Superior
rooms occupy an entire cottage, with larger bathrooms (including bath and shower) and an exclusive terrace. The Royal
Suites, named Flamboyant and Bougainvillea, boast large living and dining areas, double terraces and spacious double
rooms and bathrooms with jacuzzi, guest toilet, and a discreet position set back in the gardens for additional privacy.
The decor is minimal, as befits a tropical beach hotel, combining the soaring roofs and bright light from the sea
and sand outside with cool, airy colours, painted to look gently faded in the sun.
There are two restaurants, two bars, conference facilities, a Kids & Teens Club and a very popular programme of
nightly entertainment performed by the hotel’s talented show team.
During the day, guests can enjoy free water sports, go on deep sea fishing or golfing expeditions, take one of the
many excursions into the capital city Port Louis for shopping or visit the National Park, or just lie on the beach with a
book.
With 24 hours room service, beach refreshments and just over 500 staff to look after guests’ every need, the only
compulsory activity at La Pirogue is to do exactly what you want, when you want.

La Pirogue brings the pool to the beach
Guests checking in are greeted by a magnificent new pool area which blends cunningly with the beach and sea.
La Pirogue overlooks one of Mauritius’ most famous beaches, Wolmar, and guests have always moved between
the hotel grounds and the golden sand, swimming in the warm Indian Ocean, enjoying all types of water sports and the
views of spectacular Le Morne mountain and the lush foliage which forms a backdrop to the blue ocean.
The new, 1040 square-metre pool is not only surrounded by palm trees, it has beautifully flowering frangipani
trees which appear to float in its waters (they are actually in planters set into the pool). Free-form and comprising several
distinct areas, the pool caters for children at its north end – where a shallow walk-in makes entry easy for the smallest
infant – while the south end is adult and sophisticated, overlooked by the chic dining pavilions of Paul and Virginie.
Different areas are emphasised by the planting of beautiful foliage, so that people using the sun-loungers can
enjoy the maximum privacy and peace possible and a central jacuzzi creating a visual punctuation, in the pool itself.
On its shoreside, the pool area descends to the beach in a series of shallow terraces, all filled with white sand.
The illusion is continued by the use of a pale gold Chinese slate on the floor and walls of the pool, offset by a pale blue
stripe around the edge. The sun turns the water a deep, natural blue and the floor to sand.
The pool has one or two natural advantages over the beach, however. A poolside bar caters for thirsty guests and
children wanting simple snacks without taking too long a break from the water. The “activity” section features a water
slide and play area. The jacuzzi makes a perfect end to the day as the sun begins to go down, giving the guests the
feeling that they are surrounded by water.
For guests relaxing on the landward side of the pool, two overflow edges create an illusion of water flowing over
into the sea, and the thatch-and-timber dining pavilions extending over the water have a backdrop of the beautiful Le
Morne mountain range.
At La Pirogue, it is possible to float between sea, sky and sand – the perfect way to experience the Indian Ocean
in style.

New ways to eat out at La Pirogue
“Everyone loves eating outside when they are on holiday in the tropics” says Alistair Macbeth of RSL/Macbeth,
the architects responsible for the transformation of La Pirogue, “so we wanted to make it possible for as many guests to
eat alfresco as we could – even in unpromising weather.”
Working with Food & Beverage advisers from One&Only Resorts, Alistair Macbeth set out to open up the existing
restaurant areas, bringing them as close to water as possible and allowing for the new, highly visual style of cooking
planned by the hotel’s culinary team.
THATCHES
Thatches is the main restaurant catering for hotel guests at breakfast and dinner. It overlooks the old hotel pool,
which has been reborn as a decorative pond, surrounded by plants and lined with Chinese slate which gives it a calm,
reflective atmosphere. On its edge sit three airy dining “pods”, each seating up to 30 people, while the main body of
the restaurant has had its roof extended, providing cover for up 200 diners.
“It’s a radical new look” enthuses Elmar Pichorner, One&Only Resorts’ Food & Beverage Project Manager, “so we
decided to bring a completely new look and feel to the food. There is more variety and energy, with guests moving around
and sampling the food stations, live cooking, lots of food with Mauritian influence – braised meat and fish, spicy sauces,
seafood, freshly made creole rougailles and curries, as well as Indian touches – it’s exciting.”
Food stations in the new-look restaurant, which has been raised to give it fine views and a split-level effect,
include an Asian Corner with stir-fries and live wok cooking, a pasta section, European-style grill, a Japanese teppanyaki
station, a pasta section, a wood-fired pizza oven and a chilled salad bar with chefs waiting to tailor-make salads to
guests’ specific requirements. Anyone with any appetite left can help themselves from the dessert and ice-cream counter.
Mauritian dishes are very important at Thatches. La Pirogue has always been most Mauritian-influenced and its
menus reflect the fascinating mix of influences that has made Mauritian food so distinctive.
The buffet will feature tandoori specialities and spicy Mauritian curries – reflecting the strong Indian influence on
the island – as well as European-inspired recipes, such as rougaille, a tomato-based sauce with onions, garlic, parsley
and thyme which is added to fish or chicken, and Vindaye – braised fish which has been marinated in saffron, mustard,
vinegar, onions and garlic.
The table tops are unique; using hand-made Mauritian tiles in metal frames, reflecting the colours of the island
– terracotta, cream, mustard, olive – which blend well with the new modern style of the restaurant.
“The idea” says the architect, “was to move the restaurant into the garden – extending out the covered area,
moving the seating far out, making maximum use of open air, thatched roofs, but at the same time, bring the gardens
inside the restaurant, by using warm colours to give this earthy feel”.
PAUL AND VIRGINIE
Nearer the beach, the romantic dining restaurant Paul and Virginie – named after the Mauritius’ legendary illfated lovers – has kept its natural charm and the sound of the sea, while extending out over the new pool in the form
of thatched pavilions.
Each of the twelve pavilions seats just ten people. “The spectacular thing about these pavilions is that they are
on raised levels” explains Elmar Pichorner, “now when you sit down to eat at Paul and Virginie you have stunning views
across the pool, the sea and the beach.”
Paul and Virginie’s menus always took maximum advantage of the wonderful fresh fish and seafood – not to
mention local spices – which abound in Mauritius. Now those components can be prepared exactly as the guest wishes:
your fish can be grilled, steamed or smoked, served with rice or vegetables – whatever you feel like!” New arrivals on
the menu include Asian-influenced dishes and wraps, as well as our classic favourites.
The look of the restaurant is still natural and “barefoot” but the use of thick slab sapele wood tables with matching
chairs and cream and ocre cushions gives it a sleeker, more laid-back feel. Tables arrangements are contemporary and
boast an innovative range of china, reflecting the colours of the immediate surroundings: palm leaves, wood and grass.
“The look and feel of both restaurants are beautiful; exciting and new, but with a reassuringly familiar ambience”
says Pichorner, “the guests are going to love them.”
The cool, new Blue Bar with its blue lights and granite tops, will offer a trendy yet sophisticated atmosphere and
will definitely be the hip place to be, to sip a Blue cocktail.
OTHER DINING OPTIONS
La Pirogue guests are always welcome to “cross the line“ to Sugar Beach Resort and eat at Citronella’s Café, the
intimate beach side restaurant, with romantic, colonial and Mediterranean atmosphere. The menu at Citronella’s Café
combines the freshest of flavours from Mediterranean Europe – olive oil, balsamic vinegar, basil, thyme, goat’s cheese
– with exotic Eastern fare: for instance, Middle Eastern mezzeh (hummus, baba ghannos, tabouleh, grilled vegetables),
Black Risotto with Champagne & Crawfish and Citronella’s Chocolate Melt (hot chocolate biscuit with orange sherbet on
Kahlùa sauce).

Fresh, tropical rooms at La Pirogue
As part of the refurbishment of the lobby, restaurant and pool areas at La Pirogue, the guest rooms are also
sporting a new, fresher look.
The island looking thatched cottages, each with a private terrace are scattered about the beautiful gardens, in
crescents and horseshoes. Guests love the fact that every cottage is ground-level, giving a private feel and making it
convenient for families.
The new colour scheme looks to the sea and its shells for inspiration, combining creamy vanilla and coral shades
on wide-striped bedspreads and lampshades. Sweeping curtains with coral edging are set off by cool, off-white walls
and ceilings – making the rooms as bright as possible.
“We’ve made it light and unfussy” explains the architect, “we’ve particularly used colour on colour, which gives
texture without making it too busy. The colours are vibrant, perfect for a holiday, without being overwhelming.”
Bathrooms have been transformed by removing shower curtains in favour of glass doors and adding chrome
fittings, off-white tiles and white sanitary ware. Thick, fluffy white towels, matching facecloths and bathmats, provide
the finishing touches. The overall feel is spacious and modern, with clean lines and the minimal use of colour.
“Everyone needs space to unpack and relax when they’re on holiday” adds the architect, “Now the rooms are so
inviting, it’s going to be difficult to choose between staying inside and going outside. The emphasis is far more on space
and light.”

Rudy Oretti – General Manager
Rudy Oretti was born in Leicestershire, England, and enjoyed early experience of the hotel industry; his father
was General Manager of The Swallow Hotel in Stockton-on-Tees and his weekends and holidays from school were spent
working in the hotel’s Food & Beverage department.
After joining Swallow’s Management Trainee Programme, he went on to hotel school at Ealing College of
Hotelkeeping in London (now part of Thames Valley University), and upon graduation became Junior Assistant Manager
at the Grand Hotel Bristol.
This led to Food & Beverage postings at Thistle Hotels and ITT Sheraton; the latter was his first foreign
assignment, as Catering Manager at the Sheraton Darwin in Australia in 1986. He became Food & Beverage Manager
of the Alice Springs property a year before moving to Hong Kong with the group.
As Assistant Food & Beverage Manager at The Sheraton Hong Kong Hotel & Towers, he supervised 13 F&B outlets
as well as a large banqueting department, and oversaw the opening of two new top-quality restaurants in the hotel; an
Indian tandoori restaurant and a fine Cantonese restaurant.
In 1990-91 he took time out to obtain an MBA from the University of Wales at Cardiff, rejoining the Sheraton
Group in Phuket, Thailand, as Director of Food & Beverage for the opening of the Sheraton Grande Laguna Beach Resort.
This involved everything from the layout of interiors and uniform design to the development of menus, entertainment
concepts and standards and procedures for F&B staff.
After 9 years with the Sheraton Group, Oretti joined the Ritz-Carlton, Hong Kong, as Executive Assistant Manager
in charge of Food & Beverage, and watched F&B sales increase by over 40% in his first year. He became Resident
Manager until 1997, when he moved to the Philippines to become Resident Manager of the Peninsula Group’s property
in Manila.
During that time the hotel was voted “Best Hotel in Manila” by Business Traveler – Asia Pacific and was the only
Manila Hotel to make it onto Conde Nast Traveler’s coveted Gold List.
Oretti joined in September 2001, as General Manager of La Pirogue in Mauritius, and is an enthusiastic supporter
of the group’s constant quest for quality and rigorous staff training. He enjoys a highly positive and mutually beneficial
working relationship with neighbouring property Sugar Beach Resort and is a keen advocate of all things Mauritian;
particularly golf and deep sea fishing!
Rudy Oretti is married with two sons and enjoys travelling with his family and collecting fine wines.

Conference & Incentive Groups at La Pirogue
Conference delegates assembling at La Pirogue can enjoy a perfect combination of professional facilities with
superb entertainment and relaxation opportunities. At the same time, incentive groups are magnificently catered for, with
themed banquets, shows and tailored programmes of activities.
Away from the distractions of the beach, the conference centre at La Pirogue is situated on the third floor of the
main building, in an air-conditioned room (193.3 sq m/580 sq ft) which can accommodate up to 250 people seated
cinema-style, or up to 280 people for cocktails.
A more intimate boardroom on the floor below is ideal for smaller numbers or breakaway sessions, seating up to
40 cinema-style or 50 for cocktails. This room also doubles as a reception area for larger, more formal banquets.
The hotel’s specialist conference team ensures the smooth running of all events and facilities include data
projector with 5-metre screen, 35mm remote-controlled carousel slide projector, overhead projector and public address
system with wireless microphones, cassette decks and CD player. The team is more than happy to accommodate specific
requests for staging, lighting and sound.
The conference facilities at La Pirogue are not only popular because of their size and their proximity to the busy
hub of Port Louis; they can also double as venues for weddings and other celebrations and for awards ceremonies or
motivational sessions for incentive groups.
Fun is provided in the form of water sports or land sports, from waterskiing to beach volleyball (with all equipment
and tuition provided), excursions to local attractions such as the Casela Bird Park or the Water Park, or just glorious
hours snorkelling, using pedaloes or lying on the white sand beach.
Themed evenings often round off an event perfectly; organisers can choose from a Mauritian night, complete with
tropical buffet and Sega show; Mediterranean (with fresh, colourful food and matching decor); Chinese or Indian nights
with accompanying menus and entertainments; or the popular Seafood Buffet down on the beach by the Paul et Virginie
restaurant.

Looking after the kids, Mauritian style!
Kids and parents have everything they could wish for at La Pirogue: 2 to 11-year olds have their own dedicated
Fun Kids Club, fully supervised by trained staff, so that parents can spend a little time on their own, take a shopping
trip into town, or simply lie on the beach in complete peace and quiet.
The thatched clubhouse is Mauritian-themed, decorated with the typical bright, cheery colours of the island.
Provided they are toilet-trained, toddlers from 2-4 years old can join in with the fun and games and use the facilities
until 7pm. After dinner, they must be accompanied by either a parent or a babysitter – which can be arranged by the
hotel. Toddlers have their own sandpit outside, as well as an indoor play area with plenty of toys, drawing materials and
games for “quiet times” out of the sun.
There is a little kitchen where kids of all ages can make biscuits and cakes for their own tea – under the watchful
eye of a “head chef” of course! – and children between 4 and 11 have supervised computer time, including internet access
(where they can make new friends, comment on the clubs or set up new e-pals with other Kids members) and try out
new Playstation games. The computer room tends to be used only after lots of outdoor activities to provide a contrast and
calm everybody down; children are not left to cyber-surf on their own.
“Most kids visit at least once a day while they’re here, just to join in one of the activities” says Dominique, the
hotel’s Fun Kids Club manager, “they all love crab hunting and pony rides and treasure hunts around the grounds, and
many of them take the chance to try sports out for the first time without any pressure.”
Kids can try tennis, mini-golf and ping pong on land, and windsurfing, sailing and waterskiing on the water (not
to mention “rocket” or “banana” rides behind the ski boat). There are complimentary pony rides once a week, stage
shows – including exotic local Sega dancing! – for the parents twice a week, and parties for children celebrating
birthdays. There are also supervised excursions outside the hotel, to the Martello Tower at Tamarin or to the popular
Casela Bird Park.
Older kids in their teens tend to hang out in the Boat House area, perhaps because they too have free access to
water sports and like the laid-back atmosphere beside the beach. As members of the Teens’ club they enjoy a relaxed
programme of discos, excursions and other entertainment.
La Pirogue’s Fun Kids Club is open from 10am to 10pm and dinner for the kids is served at the Club between
6pm and 7pm for no extra charge (a small supplement is payable for lunch). A full babysitting service is available from
one hour to a whole day, using a pool of regular sitters, and packages can be negotiated with the hotel and the babysitter.

Two tropical wedding settings to choose from at La Pirogue
For many people, a tropical wedding is the dream of a lifetime; simplicity, charm, blue skies and sun, a stunning
background and hardly any organisation to be done!
At La Pirogue, guests intending to marry have two options. They can choose from a classic beach ceremony, with
bare feet, the sand and sea for background and a romantic sunset stroll down the beach afterwards; or a ceremony in
the stunning wedding gazebo in La Pirogue’s famous gardens, with its own pool and rustic bridge overlooked by a
magnificent Flamboyant tree (which has flaming red blossoms in season) and even a horse-drawn, flower-bedecked
caleche to go away in!
Weddings at La Pirogue are so popular that they are generally limited to one a day, exceptionally two, and all
weddings on the property are scheduled at different times or different parts of the hotel, so that the day remains
absolutely unique for each couple.
Legal requirements are overseen by the hotel; the couple must provide evidence that they are non-residents of
Mauritius and must be on the island for at least three days before the ceremony, which will be conducted by a local
government official. The hotel’s Wedding Liaison Officer will be on hand to help with documentation and discuss flowers,
food and ceremony, to advise about hair and make-up and any little extra purchases that need to be made – and to
provide witnesses, if necessary.
Celebrations after the event can range from a romantic candlelit dinner for two at Paul et Virginie’s (or even on
the beach itself) to a Mauritian-style barbecue banquet for family and friends, with fresh fish and seafood, Creole and
Indian dishes, and fabulous tropical fruits. Wedding guests can even enjoy a flutter in the hotel’s casino afterwards, or
simply take a night-time stroll under the tropical stars. All in all an unforgettable experience for the happy couple and
their family and friends.

Unlimited fun on the water at La Pirogue
La Pirogue is perfectly placed to be a haven for all types of water sports; its sandy beach runs straight into an
area of beautiful, shallow, clear water which is protected by a coral reef a few hundred metres out from the shore. Most
guests spend hours with a mask and snorkel, looking at the fish and coral.
For the more active, there is a non-stop menu of activities. Free to guests (on a first come, first served basis) are
windsurfers, pedaloes, single and double canoes, snorkels, masks and fins, waterskiing, glass-bottomed boat rides and
Laser sailing in a fast, single-hulled boat perfect for the environment.
Activities which incur a small charge include parasailing, bananas and “rocket” rides, and tuition above and
beyond beginner level. The 23 Boathouse staff speak several languages and are delighted to familiarise guests with new
equipment, or to give them basic lessons in the different sports. Opening hours are from 9am to 6pm (5pm from May
to October) and the rescue boat is always on hand to rescue tired windsurfers or sailors in a fix.
All those who dive, or wish to learn to dive, will find themselves in an underwater paradise, with 30 outstanding
dive sites within 15 minutes of the beach and another 15 further away. Thierry de Chazal, chief diving instructor at the
Dive Centre, conducts courses almost every day for beginners PADI Open Water qualification. Night diving, Rescue diving
and Advanced Diving is extra and dives for experienced divers are charged for individually.
“You can reasonably expect to see moray eels, scorpion fish, tuna and king fish, as well as more common tropical
varieties” explains de Chazal, “and there are some very deep canyons and drop-offs for advanced divers. But beginners
love the shallower dives, such as The Aquarium (15m/45ft), which is full of fish.” Star of the show is Kong, a moray eel

Embellie après quatre mois de travaux, La Pirogue a rouvert ses portes en
novembre 2003 sur la côte ouest de l’Ile Maurice, à une demi-heure de la petite ville
de Quatre Bornes, le long de la superbe plage de Flic en Flac.
Les inconditionnels seront ravis de retrouver la simplicité de bon aloi de cet
hôtel 4 étoiles, relooké et rajeuni, et les autres seront charmés par le style
décontracté et l’ambiance tropicale.
La Pirogue propose 248 bungalows (chambres standard et supérieures) dont
2 Suites Royales. L’hôtel est géré par la chaîne hôtelière One&Only Resorts, tout
comme le pétillant Coco Beach*** (sur la côte Est) et Sugar Beach Resort (hôtel
contigu à La Pirogue). À noter que La Pirogue et Sugar Beach Resort sont

Construite sur le modèle d’un village de pêcheurs, dans un style architectural
inspiré des barques traditionnelles de l’île, la nouvelle Pirogue est bien jolie avec son

Des chambres lumineuses
Face au lagon, au cœur d’un parc tropical, des villages de bungalows ronds en
pierre volcanique, coiffés d’un toit de chaume à longue frange. Les villas portent
avec coquetterie des noms de fleurs ou de plantes de l’île : frangipanier, hibiscus,
canna, alamanda…
Toutes les chambres (200 standard et 46 supérieures) sont en rez-dechaussée et dotées d’une terrasse privée donnant directement dans la palmeraie,
avec vue sur le lagon.
Spacieuses et claires, elles ont toutes été redécorées et se parent de nouvelles
couleurs : murs et sols blancs, tons vanille-crème pour les meubles et teintes corail
pour les dessus-de-lit, les larges rideaux et les abats-jour.
Les grandes salles de bains lumineuses optent pour la sobriété et la douceur
des tons blancs et vanille.
Les 2 Suites Royales, Flamboyant et Bougainvilliers, sont dotées d’une double

Des nouveautés gourmandes
À côté de la nouvelle piscine et ouvert sur l’océan, le romantique restaurant
Paul & Virginie (120 places) a été entièrement reconstruit, en gardant son charme
et son atmosphère.
Les douze pavillons au toit de chaume peuvent accueillir chacun 10 convives,
dans un décor de chaises habillées de coussins ocre et crème et de tables en bois
lisse et brillant, avec une jolie vue sur le lagon et la montagne du Morne.
Au menu de la nouvelle carte de ce restaurant décontracté au déjeuner, chic
et romantique au dîner : des poissons, crustacés et fruits de mer, cuisinés à la
convenance de chacun (grillés, pochés, fumés, à la vapeur), délicatement
accompagnés d’épices locales, et des mets asiatiques raffinés.
– Thatches, le restaurant principal (450 places), tout près du bassin de lotus,
dispose de trois pavillons qui peuvent recevoir 30 personnes au petit-déjeuner et au
dîner.
Nouveau concept original, à la fois restaurant dans le jardin et jardin dans le
restaurant, il offre un maximum d’espace et de lumière, dans un décor élégant de
matériaux naturels : chaume, bois, pierre volcanique, carreaux de couleur terracotta,
moutarde et olive.
Conçu autour d’un espace de cuisines démonstratives et innovantes, il permet
de découvrir des saveurs variées en mettant en vedette quelques recettes volées aux
grands-mères mauriciennes : viandes et poissons braisés, rougailles et curries
créoles, chatini, vindayes (poisson braisé mariné au safran, à la moutarde, au
vinaigre, aux oignons, à l’ail et au thym), mais aussi un espace asiatique (cuisson
au wok), un coin pâtes fraîches et pizzas, un bar à salades, composées à la
demande, selon le souhait du client, et certains soirs, des grillades teppanyaki. Pour
les gourmands, des glaces, des entremets et autres délices apporteront la note
sucrée à ce tour du monde des saveurs.
Pour un dernier verre entre amis, le cool « Blue Bar » avec son comptoir de
granit bleu reste incontournable pour « siroter » jusque tard dans la nuit, dans une
atmosphère de lumières bleutées, un Blue Cocktail… bien sûr.
Pour combler les petites faims à tout moment de la journée, un chariot-bar
propose des rafraîchissements sur la plage de 10 heures à 18 heures et la livraison
de pizzas à l’ombre sous la paillote.
Les clients de La Pirogue seront les bienvenus au Sugar Beach Resort, pour un
déjeuner ou un dîner au Citronnella, le restaurant d’inspiration méditerranéenne,
situé près de la plage, ou pour une dégustation de rhums « arrangés », le soir, à la

Une piscine de toute beauté
La nouvelle piscine à débordement de 1 000 m2 n’a pas fini de faire parler
d’elle. Face à l’océan, à deux pas de la plage (l’une des plus longues de l’île), dans
le cadre d’une véritable oasis, elle offre aussi : un jacuzzi, un espace réservé aux
enfants avec toboggan aquatique et des chaises longues tout autour pour bronzer ou
se reposer à l’ombre des frangipaniers, comme dans un salon en pleine nature.
Des activités pour les sportifs
Le club nautique est le rendez-vous des amateurs de Pédalos, kayak, planche
à voile, bateau à fond de verre, ski nautique, tout est gratuit…
Une participation raisonnable est demandée aux parachutistes ascensionnels,
aux amateurs de randonnées à cheval, de marche sous l’eau en scaphandre et aux
élèves de l’école de plongée PADI qui découvriront quelques sites sous-marins
particulièrement somptueux de ce côté de l’île.
Quant aux amateurs de pêche au gros, ils pourront capturer leur premier
marlin à Rivière Noire ou encore l’espadon, la « carangue », la bonite ou le thon
jaune.
Un centre de conférence
Deux salles de conférences et de réunions de 250 et 60 m2 accueillent les
hommes d’affaires et, selon l’aménagement, 220 ou 350 places sont à disposition
avec toutes les facilités pour organiser congrès, séminaires ou voyages « incentive »,
et un secrétariat est prêt à répondre à toutes les demandes.
