Der Lech ist einer der letzten, großen
Wildwasserflüsse Europas.

Daher steht das Tal, in dem wir und unsere Tiere
und Pflanzen leben, seit Jahren unter Naturschutz.
Die Kelten haben ihm einst den Namen „Licca“,
sprich „der schnell Fließende“, gegeben. Diesen
Charakterzug konnte er in unserem Tal behalten.
Denn hier bei uns darf sich der Lech schon seit
ewigen Zeiten seinen Weg frei bahnen. Dadurch
wurde er auch zum eigentlichen und bestimmenden
Landschaftsgestalter.
Mit seiner einzigartigen, klaren Türkis-Grünen Farbe
schlängelt er sich durch die Landschaft.
Er warf mächtige Kies- und Schotterbänke auf und
ließ in seinen Nischen und Mulden Auwälder
entstehen, die nach wie vor, vielen längst schon
gefährdeten Pflanzen- und Tierarten Lebensraum
und Refugium geben. Der Naturpark Tiroler Lech ist
daher auch ein echtes Juwel an Biodiversität.
Aufgrund der exklusiven Größe unseres boutique
Hotels, können wir die Zutaten für die Speisen und
Menüs besonders individuell wählen und beziehen.
Wir legen äußerst großen Wert auf eine gesunde,
regionale Herstellung der Speisen.
Im Sommer wird viel selbst gesammelt, geangelt
und gepflückt. Schnittlauch, Alpenrosen und
unzählige Heil-Kräuter frisch von den Alm-Wiesen.
Damit Sie auch im Winter den einzigartigen
Geschmack unserer alpinen Nahrungsmittel erleben
können – werden diese Naturprodukte für Sie - wie
vor 100 Jahren - eingelegt, getrocknet, geräuchert,
eingekocht, oder anderweitig haltbar gemacht.

MENU « LECH »
au fil de l’eau, au fil des saisons
Le Lech est l’un des derniers grands fleuves
d’eaux vives d’Europe.
C’est pourquoi la vallée qui abrite nos animaux et nos
plantes est depuis bien
longtemps déjà une zone naturelle protégée.
Ce sont les Celtes qui lui ont donné son premier nom – Licca –
ce qui signifie « celui qui coule vite ».
Et dans notre vallée, il a pu conserver ce trait de caractère.
Car chez nous, le Lech sillonne depuis toujours en toute
liberté. C’est aussi la raison pour laquelle il est devenu un
élément à part entière de notre environnement. Ses eaux
limpides turquoise se faufilent à travers nos paysages.
Jadis, il souleva d’imposants bancs de galets et de pierraille
pour faire naître dans ses niches d’indispensables espaces
alluviaux. Aujourd’hui comme hier, ceux-ci sont le refuge vital
de nombre de plantes et d’animaux en voie de disparition.
Ainsi, le parc naturel « Tiroler Lech » est un vrai bijou de
biodiversité. La taille de notre maison est suffisamment
humaine pour que nous puissions choisir très
individuellement les composantes de nos plats et menus,
pour des mets sains et régionaux. En été, nous cueillons,
pêchons et ramassons nous-mêmes un grand nombre de
trésors : ciboulette, rhododendrons des Alpes et une foule
d’herbes aromatiques sur nos prairies d’alpage. Ainsi, vous
pouvez découvrir – en hiver aussi – le goût inimitable de nos
aliments alpins. Et comme autrefois, nous en faisons des
conserves, des confits, les séchons, les fumons... pour pouvoir
les garder « à l’ancienne ».

The Lech is one of the last great white-water
rivers in Europe. Therefore, the valley in which
we, our animals and plants live, is under nature
conservancy. Once given the name "Licca" 'the fast-flowing one' , by the Celts - the Lech
was able to stay true to this trait ,in its valley
,over time. Here in our valley, the Lech has
been able to go and follow its own path since
ancient times.
Thus it was also the actual and determining
landscaper! With its unique , clear , turquoise green color it winds its way through the
landscape of the valley. It carved in great
pebble and gravel banks, having riparian
woods occur in its niches and hollows - which
for ages has given endangered species , plants
and animals, their habitat and refuge. The '
Tyrolean Nature Park Lech ' is therefore a real
gem of biodiversity.
Due to the size of our exclusive boutique hotel,
we can select and obtain the ingredients for
our meals and menus very individually. We
highly emphasis the regional and healthy
production of our food.
In the summer - a lot of it self-gathered ,
fished and picked. Chives, alpine roses and
countless fresh herbs from the surrounding
alpine meadows. So you can experience the
unique flavor of our foods- even in winterthese natural products are getting treated just
like they used to be 100 years ago - preserved,
dried, smoked , boiled or otherwise made
durable.
