There is perhaps no region on Earth with greater and more lasting tradition with wine. It is the Burgundian way that has convinced many of the world's vignerons to forgo heavy handed intervention and barrel treatment for the purpose of rediscovering the magic of the terroir the grapes are grown in. It is for this reason that we have decided to break our menu into regions for we feel, as the Burgundians, that great is made in the vineyard.
BURGUNDY -­‐ CHABLIS
Surrounding the sleepy northeastern French village of Chablis, far removed from the rest of Burgundy are the vineyards of what many people call the greatest and most precise expression of Chardonnay. The vines, which each year struggle to ripen, sit on a razor's edge of electrifying acidity, while soaking up the chalky deposits from its Kimmeridgian soil.

BURGUNDY -­‐ CÔTE D'OR
The Côte d'Or, or Gold Coast, is the heart of Burgundy. It is where Benedictine and Cistercian monks introduced Pinot Noir and Chardonnay and meticulously recorded 1000 years of vintages while establishing a tight network of stone wall divided micro climats called clos. The Côte de Nuits and the Côte de Beaune further divide the Côte d'Or, each roughly measuring 15 miles along the Route des Grands Crus. Along this escarpment rising 300 meters above the Saône River are the dizzying number of Communes still dedicated to the reputation and pedigree of Pinot Noir and Chardonnay.

The Côte de Beaune surely has the better reputation for its white wines. The harder Oxfordian limestone etches a sharper more defined minerality to the wines though each village represents a snapshot of the complex stratographic mix of marl and limestone. From the imposing hill of Corton to the gentle slopes of Montrachet, Chardonnay finds is finest expression in the famed vineyards above the Saône.

Not only France's longest river, the Loire stretches from the rocky Atlantic coast deep into the heart of the country past the town of Sancerre and Pouilly. It is hard to think of the Loire as a single appellation given the enormous variety of wines made here. From the crisp, saline Melon de Bourgogne of Muscadet, to the oxidized Chenin Blanc of Savennières, or the honey Chenin Blanc of Vouvray, to the grassy Sauvignon Blanc of Sancerre, the grapes and styles and soils vary tremendously. But with the array of wine comes the ceaseless drinkability of the wines copiously consumed in the bistros and restaurants of Paris.

Since rebuilding its vineyards post World War II, Friuli has become home to some of Italy's most empassioned producers of white wine. The great vineyards of Friuli stretch into the schistous ponco stones of the Julian Alps and even spread over into Slovenia, which was divided from Italy in 1945, and down along the iron rich Adriatic coast to the old Austrian resort town of Trieste. Friuli truly sits at the crossroads of Italian, Austrian, and Slavic tradition and cuisine producing fascinating wines of great depth and versatility.

Even with a warming climate, German vineyards sit at the Northernmost extreme of where grapes can be effectively grown. Here the world's greatest white grape finds its home along the scenic hills of the Rhine river valley. The profoundly aromatic and tart Riesling grape is unparalleled in longevity and succeeds in a myriad of styles. Although often taken as a sweet wine, Riesling is most often fermented dry to accentuate its piercingly tart and clean finish. German wine labels can be hard to read since the 1970's with the inclusion of the Prädikat designations. Now the German wine producers group (VDP) is passionately reviving great vineyard sites and promoting wines of a dry style. From such a cool climate, expert German winemaking crafts wines of stunning length and complexity sure to find a home among seasoned collectors and newcomers alike.
MOSEL
The rolling Mosel river with its steep slate cover banks and charming patchwork of villages is the benchmark for classically styled Riesling. The crisp waters of the Mosel which flow down from the Vosges mountains reflect enough sunlight back onto these undulating slopes that would otherwise never produce fruit. Here the poetic names of the vineyards are attached to the village and the wines often carry the Prädikat distinction to indicate ripeness and sweetness. 335

This East-­‐West bend of the Rhine river is the cultural and academic heart of winemaking in Germany. From Rüdesheim to Wiesbaden, the Taunus Mountains tower over the north banks of the river. The early thaws along the Taunus have long been attributed to sunlight reflecting from the Rhine and have permitted grape growing since the 9th century. Barolo is often called the King of Wines, and with good reason. The name "Barolo" can be confusing because it refers to a village, a style of wine made exclusively from Nebbiolo, and the viticultural zone surrounding the eponymous town.
