Main study areas and research topics
Research themes focus on the development of soluble dietary fibers from chicory pulp and wheat bran. Such fermentative
fibers can be used in human and animal alimentation to favor the intestinal flora and elicit health benefits to the host.
Another axis is the optimization of enzymes of industrial interest through site-directed and random mutagenesis.
