wabi sabi (佗寂) means modest, understated beauty
Take a culinary journey that goes beyond sushi and sashimi at Wabi, the stylish new Japanese
restaurant from ex-Nobu head chef Scott Hallsworth. With a restaurant, cocktail lounge, sushi
bar, dessert bar, private dining room and outdoor terrace, Wabi offers an authentic Asian
experience in suitably smart surroundings. And with menus that range from the a la carte and
tasting menu to the amazing value set bento and sushi lunches, it’s ideal for varied budgets and
occasions.
Located in Holborn, in the heart of the capital’s legal district, Wabi is a study in sleek, minimalist
Asian aesthetics – all clean lines, soft colours and subdued lighting. For the summer months,
an upstairs al fresco terrace overlooking Lincoln Inn’s Fields offers diners the chance to enjoy
long, languid sushi lunches in the sun whilst sipping on contemporary Asian-inspired cocktails.
A downstairs private dining room is available for corporate affairs and private celebrations.
TURNING JAPANESE
Scott’s food is both creative and technical, elegant and beautifully executed: using traditional
techniques and fresh, seasonal British ingredients, dishes run the gourmet gamut from sushi
and sashimi to fire-roasted and BBQ. Highlights include: tea-smoked pork scratchings with
pickled wasabi dip; kombu-roasted Chilean sea bass with spicy shiso ponzu; quail kara-age
with yuzu kosho mayo and pickled pumpkin; and Wagyu and foie gras gyoza with goma ponzu.
RAW DEAL
Purists should pull up a stool at the sushi bar and watch Wabi’s team of highly skilled sushi
chefs in action, led by former Nobu head sushi chef, Taiiji Maruyama. As well as a supreme
selection of contemporary sushi each with its own specific toppings including classic sashimi,
nigiri and maki that one would expect, Wabi also offers a range of tantalising ‘ ‘tataki’ dishes
and Asian salads as well. Favourites include wood-fired mushroom salad with yuzu-truffle-miso
dressing; soba ‘pancakes’ with king crab, avocado, yuzu mayo and puffed soba; and beef fillet
tataki with onion ponzu and garlic crisps.
SUGAR RUSH
Puddings are taken seriously at Wabi with a dedicated dessert bar which is overseen by Sergio
del Castillo Mora, a fellow Nobu London graduate. Sergio’s signature ‘chocol-8’ – chocolate
served eight ways – is a decadent must try, whilst others include the likes of chestnut dorayaki
– shiro an, chestnuts, vanilla and salted caramel glace with Suntory brandy – and Zen Garden,
matcha-avocado oil sponge, R&B, yuzu, pine nuts and sesame sugar. Pull up a stool and
indulge.
KANPAI!
A drinking destination in its own right, cocktail connoisseurs will welcome Wabi’s cool concoctions
bursting with eastern promise. Tantalising tipples include Emperor’s Mandolin – a heady mix
of Mandarin Napoleon, Limoncello, Lillet Blanc, yuzu juice, lemongrass and shiso topped with
champagne – and Breakfast at Wabi, a dizzy blend of Bulldog, Bergamont, yuzu jam, marmalade
and orange juice. The wine list – spanning continents, and much of it served by the glass – is
no less impressive, whilst a collection of sparkling wines, champagnes, dessert wines and sake
is sure to quench even the most demanding of thirsts.
Giving the competition a run for their Yen, Wabi sets a bold new standard in contemporary
Japanese cuisine – and looks effortlessly stylish doing it too.
