À cause de la créativité de son approche client, la cuisine très actuelle de son clan de collaborateurs et l’immense influence qu’il exerce dans le milieu de la restauration. Louis McNeil, copropriétaire et fondateur du Cosmos, l’a déjà dit : « Être à l’écoute des goûts et des exigences de notre clientèle a toujours été au centre de nos préoccupations, à chacun de nos quatre restaurants Cosmos depuis nos débuts en 1994. » Le Cosmos, qui fête ses vingt ans cette année, se refait une beauté avec une nouvelle succursale et un nouveau décor. Louis McNeil est particulièrement fier de son dernierné, le Cosmos LB9, situé dans le quartier Lebourgneuf. Avec l’aide d’une équipe de collaborateurs hors pair, dont la designer Nathalie Perron et l’entrepreneur Patrick Hébert, il a créé un endroit fabuleux à l’ambiance envoûtante. Chose certaine, il est loin d’être une étoile filante dans ce marché compétitif, lui qui a su s’entourer de talents : Daniel Lussier, son designer des trois premiers Cosmos, ses associés JeanPierre Gagnon et Jacques Talbot (qui est aussi son chef directeur), sa chef pâtissière France Giguère ainsi qu’une fidèle équipe de gérance. En deux mots, le clan Cosmos est l’un des plus prisés de la restauration. La formule est fort simple : une cuisine créative et savou reuse, dans un décor magique et résolument différent. Avec Louis McNeil, le compromis n’est jamais une option, pas plus que le fait de bâcler quoi que ce soit. Sa vision de la gastronomie québécoise doit rimer avec plaisir et gourmandise. Sa philosophie : faire le maximum avec tout ce qui pour rait servir d’écrin à des expériences gastro nomiques hors de l’ordinaire. Le Cosmos s’est aussi lancé dans l’aventure du disque. Avec la collaboration d’Alain Simard, mieux connu sous le nom de Mister Smith, D.J. officiel de l’entreprise, il s’apprête à nous livrer son quatrième disque de compositions 100 % originales (la radio Cosmos est accessible sur le site Internet du resto). On lui avait prédit trois mois, puis cinq ans d’espérance de vie avec ses restaurants; voilà qu’il s’apprête à célébrer ses vingt ans. Louis nous confie que le fait d’avoir presque tout perdu à ses débuts aurait raffermi sa volonté de durer... Quoi qu’il en soit, les gens répondent en grand nombre à son appel, ils sont ravis et en parlent autour d’eux.
