Solide Traditionen, beste Ausbildung, zeitgemässe Forschung sowie ein angeborener Sinn für Perfektion tragen zum Erfolg bei. Eines seiner bekanntesten Symbole ist das Label «Schweizer Qualität», das weltweit einen glänzenden Ruf geniesst. Zu verdanken ist all dies natürlich den Weinproduzenten, die mit zahlreichen Medaillen, die sie bei Weinconcours gewonnen haben, zu diesem soliden Renommee beigetragen haben. Diese preisgekrönten Flaschen findet man weltweit in den Kellern der besten Restaurants. Diversity is the byword for Swiss wines, made in a land rich in microclimates and terroirs. More than 50 grape varieties are used to make wine in this small country that is considered Europe’s watershed, with 6% of the continent’s fresh water supply – the source of the Rhone, the Rhine and the Inn. The stretch from Sierre to Visp in canton Valais has only 52 cm of rain a year, like the Russian steppes, while 40 km away, near Monte Rosa, annual rainfall is 400 cm. Developing a world-class wine industry, which is what Switzerland is doing rapidly, requires more than varied conditions for growing wine grapes. Strong traditions with contemporary training, top quality research and an innate sense of perfection lie behind this success, the most recent manifestation of world-renowned “Swiss quality”. The key, of course, is the wine producers who are building this strong reputation for fine wines that have won scores of medals at competitions and are stocked by the world’s best restaurants. The 60 profiles here hint at the “face” of Swiss wine. They represent innovation, tradition, discretion (but oh so talented!), the large wineries and those you’ll want to keep on eye on – a representative two for each group, from each of Switzerland’s six wine regions. Provins is definitely a large winery – the biggest in Switzerland, with its 3,400 cooperative members and 1,500 hectares of vines used for wine, from throughout the canton. It is also one of the most complete wineries in the sense that it offers wines in every category, for every price and taste, always well-made, with the proof in the title of “Swiss Winemaker of the Year”, won in 2008 and again in 2013. A completely new haut-de-gamme blend, Electus, was launched in 2014; it proves, if that were necessary, that Switzerland is capable of making wines to rival the finest in the world. Obrist is both a wine merchant and producer; an ongoing challenge, says new (May 2014) director Alain Leder, is “to put Swiss wines up front”, to improve consumer perceptions inside Switzerland to correspond to today’s high quality Swiss wines. With restaurants and hotels accounting for well over half of the firm’s busi- Alain Leder ness, Obrist imports wines and sells Swiss wines – 65% are Swiss. It is a large producer in its own right: 50 hectares of vines, including fine ones in Lavaux, with medal-winning wines. Ein wahres Kompetenzzentrum! «Wir sind ein Team von fünf bestens ausgebildeten Kellerleuten, die eng mit den Winzern zusammenarbeiten.» Im Sommer ist Michael Fuchs ständig in den Reben unterwegs. «Bekannt sind wir für unsere einmaligen Spezialitäten und Hausmarken», erzählt er. «Oft waren wir die ersten, die eine Sorte pflanzten oder eine Methode anwandten. Entsprechend oft wurden wir kopiert.» Was er durchaus als Kompliment nimmt. Denn: «Wir sind das Original!» Creative firsts in Schaffhausen. “Wine production shares something with artistic painting – it’s the style that counts,” says Michael Fuchs, œnologist at von Pablo Nett geleiteten GVS since 1995. He vinifies the harvest from 160 grape growers who work 100 hectares. This is a true centre of excellence! “In the cellar we have a team of five people who are ex- Pablo Nett tremely well qualified and we work very closely with the growers.” Michael Fuchs spends the bulk of his time in summer in the vines. “We’re known for our unique specialty wines and our private brands,” he says. “We’ve often been the first to plant a new grape variety or to apply new methods – for that reason, we’re very often copied” – a fact he takes as a compliment: “We’re the original one!” P O RT RÄT S | P O RT RA I T S 9 Cave de G enève, S a tigny GE Prestigereiche Weine für jeden Geschmack. Neben der Vielfalt bestätigt sich jedes Jahr in diversen Weinconcours die Devise der Cave de Genève: «Wir kultivieren Qualität.» Allein 2014 gewann sie mehr als zehn Medaillen, beim Grand Prix du Vin Suisse, der Internationalen Weinprämierung Zürich oder der Selektion der Genfer Weine. Thanks to close collaboration between grape suppliers and the cellar team lead by Martin Wiederkehr, the œnologists have at hand 27 grape varieties from which to build their wines. It’s a fine start for creating bottles for wine lovers – and especially the very international clientele in Geneva! More than just offering a wide range, the cellar’s motto, “We cultivate quality”, is confirmed year after year in competitions. In 2014, the winery collected more than 10 medals at the Grand Prix du Vin Suisse, Internationale Weinprämierung Zürich and Sélection des vins de Genève. Doch im Namen Nouveau Salquenen findet man das Wort «neu», wie der Besitzer des Guts gerne betont. Diego Mathier und seine Equipe haben folglich das Sortiment diversifiziert und die Vinifikationsmethoden vervielfältigt, um der Kundschaft rund 50 verschiedene Cuvées anbieten zu können. Das Haus hat zweimal den Titel «Schweizer Winzer des Jahres» gewonnen, 2007 und 2011 – Chapeau! Diego & Nadia Mathier A winery that knows how to make its mark. Salquenen is the land of Pinot Noir! The grape is omnipresent in the large range of wines made by Diego Mathier, in all its formse rosé, red, sparkling, sweet, Grand Cru – all of them rich in medals from wine competitions (4 gold at the Mondial des Pinots 2014). Diego Mathier likes, nevertheless, to remind visitors that the cellar’s name includes “new”, and that he and his team have diversified the grape varieties planted, and multiplied vinification methods to be able to offer clients some 50 wines. All of this and the title of “Swiss Winemaker of the Year” twice, in 2007 and 2011. Hat’s off! 10 Cave d u Châte au Auvernier, Au vern i er NE Wo sich Vergangenheit und Zukunft die Hand geben. Eingekellert wird die Ernte von 60 Hektaren, 45 davon bewirtschaftet das Gut selber. «Bekannt sind wir für unseren Œil-de-Perdrix, doch mein Herz schlägt vor allem für Pinot noir, Pinot gris und Chardonnay.» Auch dem Sauvignon blanc prophezeit er Zukunft. «Wer auf dem Markt bestehen will, muss Topweine produzieren, mit geringen Stockerträgen und Superqualität. Lediglich gut zu sein, genügt heute nicht mehr!» Future and past, hand in hand. Thierry Grosjean, owner of the Château Auvernier, representing the 14th generation, is back at the family domain after some time in the political world. His family has produced wines at this venerable chateau for more than 400 years. The harvest comes from 60 hectares of vines, 45 grown by the winery itself. “We’re known for our Œil-de-Perdrix, but our heart beats in particular for the Pinot Noir, Pinot Gris and Chardonnay here,” he says. “Sauvignon Blanc also has a great future. Surviving in today’s market means producing great wines from low yields in the vineyard, and superb quality. Berühmt ist die Cantina für ihre Selektion Ronchi del Contado, zwei holzgereifte, gut strukturierte, langlebige Merlots, der eine aus Monte Carasso, der andere aus Camorino. Vergangenheit und Gegenwart: Es brauchte einen Effort, um die steilen, terrassierten Reblagen zu bewahren, welche die Hügel rund um Bellinzona prägen. Big, and a leader. Cantina Giubiasco has 10% of the canton’s production – working with 450 grape growers. Big, but also responsible: it is a leader in preserving traditions while seeking new products, new markets. It makes fine Merlot, the iconic wine of Ticino, but it is also the birthplace of white Merlot, which the canton has wholeheartedly embraced as a local white that works with lake fish. The Cantina is famous for its “Ronchi del Contado” selections for two oaked local wines with good structure, which age well. Past and present: it has made a push to ensure the survival of the steep terraced vineyards that are so much a hallmark of the hillsides around Bellinzona. Er führte das von seinem Vater gegründete Haus von einem Importunternehmen zu einer der grössten und bedeutendsten Tessiner Kellereien und Weinhandlungen: Gialdi arbeitet mit 300 Winzern zusammen und kellert 1 Mio. Kilo Trauben ein. Verarbeitet werden die Trauben nach allen Regeln der Kunst in einer in den Berg gebauten Kellerei. Die Häuser Brivio und Zamberlani stiessen 2001 bzw. 2006 zur Firma Gialdi. Felicianos Tochter Raffælla Gialdi leitet mittlerweile das Marketing, der langjährige Önologe Fredy De Martin ist Chef der Produktion. Feliciano Gialdi Creating a past, ensuring the future. Feliciano Gialdi was one of those who, in the 1980s, said Ticino should be known worldwide for great Merlots. He led the Gialdi business, founded by his father, from importing to its position as one of the largest importers/ producers in Ticino: the company processes 1 million kg of grapes and works with 300 growers, making wine in a state-of-the-art production area partially built into the mountainside. Brivio and Zamberlani wineries joined the firm in 2001 and 2006 respectively. Raffælla Gialdi, Feliciano’s daughter, is now head of marketing, and long-time œnologist for the wineries, Fredy De Martin, is head of production. Der 100-ha-Betrieb, heute von Bernard Rochaix geleitetet, der von seinen Kindern Sandrine und Fabian sowie Kellermeister Sébastien Schwarz unterstützt wird, feiert grosse Erfolge: 2014 gewann er acht Goldmedaillen bei der Selektion der Genfer Weine, erhielt die höchste Note des Wettbewerbs für den süssen Muscat sowie den Pressepreis für den roten Château de Choully 1er Cru. Die dynamische Familie Rochaix hat ihr Sortiment enorm diversifiziert: Aligoté, Viognier, Gamaret oder Cabernet Sauvignon – die Auswahl ist gross (22 Weine!) und qualitativ hochstehend! Fabian Rochaix & Sébastien Schwarz 220 years “young”. The Rochaix family has been cultivating vines in Peissy for 220 years. This very successful winery today has 100 hectares and is led by Bernard Rochaix, with his children Sandrine and Fabian, working with cellar master Sébastien Schwarz. They swept eight gold medals at the Sélection des vins de Genève, including the best medal of the competition for their sweet Muscat and the favourite of the press award for the red Château de Choully 1er Cru. This energetic family has greatly diversified its offer, and now has a range that includes Aligoté, Viognier, Gamaret and Cabernet-Sauvignon – with 22 wines and remarkable quality. 12 Cave s d e la B ér o ch e, St-Au b i n -S au ge s N E Klassiker von der Neuenburger Riviera. The old cooperative winery along the Neuchatel Riviera has become renowned thanks to the Domaine des Coccinelles, the name under which organic wines from the cellar are sold at the Coop supermarket chain. “That’s helped us, of course,” says Caleb Grob, cooperative director. “We were the first in the canton to produce organic wines.” But the other wines are important, he argues: “They represent our region from A to Z, in particular the Pinot Noir and Œil-de-Perdrix.” Creative specialties are attracting new clients, for example a Transalpine blend made from Neuchatel Pinot Noir and Merlot from Ticino from Cantina Giubiasco. Bekannt geworden als Pionier beim Import von Weinen aus der Neuen Welt, begann die Familie Zweifel – seit mehr als 500 Jahren als Winzer in Zürich-Höngg bezeugt – 1968 wieder selber Wein zu keltern. Mittlerweile werden alle Stadtzürcher Weine, auch die der Konkurrenz, in ihrem Keller vinifiziert. Kellermeister Urs Zweifel erprobt mit Begeisterung Neuzüchtungen und tüftelt mit Vinifikationsmethoden. Sein Bruder Walter, Geschäftsleiter von Zweifel Weine, meint: «Bei uns ergänzen und befruchten sich Import und Produktion.» Aushängeschilder des spannenden Sortiments sind moderne Assemblagen wie der Ursus oder der stoffige Pinot noir Barrique N° 571. Z for Zweifel, Z for Zurich. Difficult to imagine the wine-city of Zurich without Zweifel! The Zweifel family made a name for itself as a pioneer in importing New World wines, but it had already been growing grapes for more than 500 years in Zurich Höngg, and in 1968 the family began making wine locally again. Today all the city of Zurich wines, as well as those of the firm’s competitors, are vinified in the cellar here. Œnologist Urs Zweifel tests new grape varieties and new approaches to vinification with enthusiasm. His brother Walter, director of Zweifel Weine, says, “Importing and producing wines are complementary activities for us, viewed as enriching.” Contemporary blends such as Ursus and Pinot Noir Barrique no. 571 lead the wine list. Sacha Pelossis erster Wein? 500 Liter, die er «zum Spass» gekeltert hat – «er war nicht wirklich gut», lacht er. Dieser 1995er liegt weit zurück, heute sind seine 6 ha Reben, 30 000 Flaschen und sieben Weine eine Quelle berechtigten Stolzes, musste er sich doch den Ruf des Qualitätswinzers hart erarbeiten. «Ich habe bei Null angefangen: ohne Reben, ohne Land, ohne Geld!» Bis 2009 arbeitete er für ein grosses Tessiner Weinhaus, daneben baute er sein eigenes Weingut auf. 2012 übernahm er den Betrieb seines Vaters. Heute hat er drei Angestellte, und sein Merlot Collina d’Oro gewinnt regelmässig Medaillen und ist der bekannteste seiner schönen Merlot-Kollektion. Sacha Pelossi From zero to independent success. Sacha Pelossi’s first wine was 500 litres that he “made for pleasure” and, he laughs, it wasn’t very good. That 1995 wine is far in the past, and today his 6 hectares, 30,000 bottles and 7 wines are justifiably a source of pride, for his reputation for fine wines has been hard-earned. “I started from zero: no vines, no land, no finances!” and he worked until 2009 for a major Ticino wine producer, all the while building his own vineyard and making his own wine on the side. In 2012 he took over his father’s winery. Today he has three people who work with him and his Collina d’Oro Merlot is a regular medal winner, the best known of his beautiful collection of Merlot wines. A man of the land, he began by putting together his vineyard, enlarging it to the 12 hectares he has today, planting specialty grapes that he can sell, improving the use of mechanization. Next came the cellar with, among other assets, a spectacular barrel room in the Tsampéhro space. Wine tourism was added: a programme of classes, visits, events in the brand-new winery equipped with the latest technology. As for the wines, they are among the best! Ich schaue nicht mehr auf die Zuckergradationen. Dafür probiere ich die Trauben Tag für Tag, so weiss ich, wann sie genau die richtige Reife haben.» Sein Vater war ebenfalls Winzer, doch seine Leidenschaft galt der Zucht von schottischen Hochlandrindern, den ersten in der Schweiz. «Vielleicht habe ich daher meinen unabhängigen Charakter! Philippe Bovet’s recipe for top wines is simple: ripe grapes, and he’s known for his expertise here. Good training matters, he says, but not necessarily following the rules. “I go the limit in the vineyard, and then I can go easy in the cellar. I don’t look at the sugar levels anymore; I taste the grapes every day and that way I know when they are just right.” His father grew grapes but his main interest was raising Highland cattle, the first in Switzerland. “Maybe that’s where I get this independent streak! The wines on his list change depending on the vintage and all of his wines are matured for long to very long periods – a minimum of 24 months in stainless steel tanks or oak. He’s a staunch defender of the bag in a box system and he introduces the uninitiated to the secrets of winemaking directly in his barrel room. He is part of the “4 elements” wine project with three fellow producers, from cantons Vaud and Valais. Next year he’ll use a horse to work the soil in the vineyard. The winery has been known for 125 years for its innovative approach – it was the first to plant Chardonnay in the region. “The diversity of our terroirs makes it suitable for growing several varieties,” he says. Seit er den elterlichen Betrieb übernommen hat, verfolgt er unbeirrt seinen Weg, «ohne nach links und rechts zu schauen.» Seine Weine stehen auf den Karten renommierter Zürcher Restaurants und sind jeweils so schnell ausverkauft, dass er ein Reservationssystem einführen musste. Seine Lieblingsweine? Bei den Roten, die neu alle in offenen Holzstanden vergären, sicher der Pinot noir, bei den Weissen… der Rheinriesling. Erich Meier 20 Trendsetter. Erich Meier, a stylish winemaker? He dismisses the notion with a flick of the hand. “I don’t follow trends – I’m unfashionable if anything – although I do try to show innovation and a youthful approach.” He may not follow fashions, but he sparks trends. Since taking over the family winery he’s followed his own path “without looking right or left”. His wines appear on the wine lists of Zurich’s most fashionable restaurants and they disappear so rapidly he had to set up a reservation system for them. His own favourite wines: a Pinot Noir where the grapes are macerated in wooden vats and, among whites, a Riesling. Die Côtes de l’Orbe sind wenig bekannt, deshalb «kann es ein Vorteil sein, wenn man ein grosses Sortiment von interessanten Weinen anzubieten hat.» Aber dahinter steckt viel Arbeit! Doch zum Schluss «muss man einfach den Konsumenten gefallen…» Love those many grapes! “My goal is to reduce the treatments in the vineyard, and while we have some older grape varieties here, like Servagnin de Morges, I like to work with the new ones.” Christian Dugon works closely with the Swiss federal research station at Changins, growing and testing many of the new disease-resistant grape varieties. He grows more than 25 varieties on his 6 hectares, including the mildew-resistant “2618” and “2604”, as yet unnamed during long test phases. Côtes d’Orbe is less well-known, so “it can be an advantage to offer a variety of interesting wines,” but it is hard work: “You have to please the consumer” in the end. Francisca, a biotechnician, and œnologist Christian Obrecht, are a complementary pair who met while training in Wädenswil. They form a creative dream team that is behind the winery’s fine products. Christian says that, as in mixed doubles, they calm each other. The flagship wine at this biodynamic cellar is Pinot Noir, the star grape in this region, and especially a rich version made from old vines. “Our heart is with Pinot Noir – but we also like our specialties,” which include Completer and Merlot. They are also fond of their magical withered-grapes wine, Beerenauslese Riesling-Sylvaner, which is produced only in good years. The Kuonens have been growing grapes in Salgesch/Salquenen since 1913, but wine production dates back only to 1979. Larissa Baron-Kuonen took over vinification at the family firm in 2009. She loves Pinot Noir and takes enormous pleasure in creating wines like an artist, whether she’s making Le Préféré, a classy and elegant wine, or Grande Réserve, made from the best vine parcels and matured several months – or rosé, sparkling and sweet wines from the grape. She’s the mother of two young children and she insists that “a vintage is like a child: you have to guide it from the very start or it will follow its own path and you risk the worst.” Domai n e s Ro u v i n ez, Sierr e VS Wenn sich Tradition auf Evolution reimt. Domaines Rouvinez has gone from 4 hectares at the start to 100 today, as the 3rd generation picks up the reins: siblings Philippe and Frédéric Rouvinez and Véronique Besson-Rouvinez. The development of the Rouvinez family business has run parallel to developments in the Swiss wine business, which the firm has often initiated: integrated production then sustainable development, blends, oaking, terroir and grape variety matching, marketing. The next step: wine tourism. “We must bring people to our wineries, show them how we work,” Dominique and Jean-Bernard insist to the younger generation. Dominique Rouvinez Fratelli Matasci , Tener o TI Familienwerte für die Zukunft. Sie selber kommt aus der Welt der Kunst, ihr Vater war Önologe, ihr Mann ist der Verkaufsdirektor. Ein Cousin ist Lebensmittelingenieur, der andere technischer Ingenieur. Die Kinder haben Marketing und Ökonomie studiert. Doch sie «alle haben angefangen mit einem Ferienjob im Weinhaus» – um zu lernen und ihren eigenen Weg zu wählen. Family values for the future. It’s not always easy to be a large, 3rd generation family with a million-bottle business, where “everyone has his ideas!” says Paola Matasci. But it works when “family values remain important – you have to think about the future”. The family members have diverse backgrounds; her own is in art, her father was an ecologist, her husband is the sales manager. One cousin is a food engineer, the other a technical engineer. The children have studied marketing and economics. But they all “have summer jobs in the winery”, learning about it, deciding on their chosen paths. Tradition ist ein Sechsgenerationenwort bei den Valsangiacomos, deren 1831 gegründete Weinhandlung die älteste im ganzen Tessin ist. Uberto führt, bis vor kurzem noch mit seinem Vater Cesare, die Import-Export-Tradition weiter, produziert aber vor allem zeitgenössische, hochstehende Wein. Schon die frühen Weine der Valsangiacomos waren hoch angesehen; als die Tessiner «Weinrevolutionäre» vor 40 Jahren komplexere Merlots forderten, überdachte die Familie ihre Produktion. Vinifiziert wird in einem Keller auf dem neusten Stand der Technik, der 2005 in den Berg hinein gebaut wurde. Der aktive Weinpolitiker Uberto setzt sich zudem für mehr Umweltschutz ein. Uberto Valsangiacomo Oldest survive by looking ahead. Tradition is a six-generation word in the Valsangiacomo family, whose wine merchant business is the oldest (1831) in Ticino. Uberto has until quite recently worked with his father Cesare, carrying on the import-export tradition, but he oversees a winery that has, for 60 years, focused on creating contemporary fine wines. Its early ones were highly respected, but when Ticino wine “revolutionaries” argued for more complex Merlots 40 years ago, Valsangiacomo reflected and improved its wines. Production moved into a state-of-the-art cellar, built into the mountainside, in 2005. Uberto, active in wine politics, argues for a stronger focus on the environment. Die Hutins wirken seit 1902 als Winzer in Dardagny, doch Jean wie auch Emilienne hatten eine andere berufliche Zukunft geplant, bevor sie der Weinpassion erlagen. Seit zwanzig Jahren teilen sich Vater und Tochter einvernehmlich die Aufgaben, seit 2008 sind sie Teilhaber: Jean kümmert sich um die 19 ha Reben und die 20 ha Ackerland, während Emilienne für Keller und Verkauf verantwortlich ist. Ihr Sortiment ist sehr vielfältig, angeführt von Sauvignon blanc, dem Gamay La Briva und der Assemblage Bertholier rouge. The Hutins have been making wine in Dardagny since 1902 but Jean, just like Emilienne, dreamed of a professional future in a completely different field – before catching the winemaking fever. Father and daughter have been associates since 2008 and they divide up the work smoothly. Jean takes care of the 19 hectares of vines and 20 hectares of crops while Emilienne oversees the cellar and sales. They produce a very diversified range whose leading wines are a Sauvignon Blanc, La Briva (Gamay) and Bertholier rouge. Und das schon seit vier Generationen, seit nämlich Urgrossvater Jules aus Versehen (und im Glauben, Riesling zu pflanzen) die ersten Aligoté-Stöcke nach Genf importiert hat! Heute führen die Brüder Christophe und Jacques Dupraz die Tradition weiter. Ihre ganz persönliche Revolution trägt den Namen Gamaret. Die Kreuzung aus Changins findet sich in nicht weniger als fünf ihrer Weine, etwa in der hochstehenden Assemblage L’Absolu. Ungewöhnlich, aber köstlich ist der süsse Gamaret Essentiel im Stil eines Portweins, der alle Liebhaber von edler Schokolade entzücken wird. Vineyard revolutionaries. Dupraz family members have considered themselves “traditionally revolutionaries” for 4 generations, since Great-grandfather Jules, a determined planter of Riesling, accidentally brought Aligoté to the vineyards of Geneva! Their own revolution is called Gamaret: the cross made in Changins is found in 5 wines in their collection, including the hugely successful l’Absolu. Gute Weine werden bleiben – das ist natürliche Selektion.» Young yet experienced. The lovely family winery on the shores of Lake Morat is well known for its wide range of specialty wines. Fabrice and Stéphane Simonet, respectively 29 and 27 years old, are not only very well trained but both have already gained solid experience at the family domain as well as abroad. They are now working on shifting the winery to biodynamic methods. “We very much believe in biodynamic wine production, but we have our feet firmly on the ground,” laughs œnologist Fabrice. Especially in the vineyards, experience counts, and we have an obligation to transmit that,” says Raoul. They are part of the mystery and play a basic role in making wines that are deep and complex, wines with a soul. These are authentic wines, very much alive and with character – a reflection of their maker, Jean-Denis Perrochet. “We’re not old-fashioned, but ‘old’ is often more efficient than ‘new’. Alain hat «nicht im Sinn, alles auf den Kopf zu stellen, ich kann voll hinter unserer Qualitätsphilosophie stehen», höchstens das Sortiment von 25 Weinen möchte er ein bisschen straffen. «Es braucht ja nicht unbedingt sechs Pinots…» Treu bleiben wird das junge Paar aber sicher dem Räuschling, der Spezialität des Hauses. «Das ist die coolste Sorte überhaupt», kommt Alain ins Schwärmen. Alain Schwarzenbach and his partner Marilen Muff, both of them qualified grape producers, are delighted that they will be taking over from Hermann “Stickel” and Cécile Schwarzenbach in 2016. Alain has “no intention of changing everything. I’m completely in agreement with the philosophy of focusing on quality.” He would like, however, to reduce by a bit the large collection of 25 wines. “We don’t really need six Pinots.” The young couple are keen to keep Räuschling, the winery’s specialty. “It is the coolest grape variety!” Alain enthuses. He would also like to continue growing the rare Completer grape planted by his grandfather and he would like to add Riesling to the vineyard. Martin Donatsch, zweifacher Weltmeister beim Mondial des Pinots, konzentriert sich zunehmend auf die Sorten Pinot noir – «in meinen Adern fliesst kein Blut, sondern Pinot!» –, Chardonnay und den urtümlichen Completer. Die Winzerstube «Zum Ochsen», von Mutter Heidi und Vater Thomas, dem einstigen Bündner Weinrevolutionär geführt, beeinflusst seine Weinphilosophie: «Wir wollen Weine, die zum Essen passen, keine Designerweine.» Nach Burgunder Vorbild produziert er Crus, mit denen er zu den Besten der Schweiz gehört. «Gute Weine gibt es viele, grosse Weine hingegen schafft man nur mit der Natur, nicht mit der Technik», ist er überzeugt. Burgundy-inspired gastronomy wines. Martin Donatsch, twice named Mondial des Pinots World Champion, has a driving passion for Pinot Noir, Chardonnay and the unusual grape Completer. He admits that “I don’t have blood in my veins – it’s Pinot Noir!” At the restaurant Zum Ochsen run by his parents Heidi and Thomas (his father is an old Graubünden wine revolutionary), the attitude is clear; “We want wines you can drink while you’re eating, not designer wines.” His wines, which are among the best in Switzerland, are based on the Burgundy model. “There are a lot of good wines, but great wines are produced only by working with nature, not technology,” says the son. Nicola, Eliana & Raffaee Marcionetti Pioneers in diversifying. Nicola and brother Raffaele Marcionetti represent young Ticino producers who aren’t afraid to work hard to do something different. They work vine parcels here and there, adding them to the small family holdings in Settemagio to create a 6-hectare vineyard where they grow Merlot (“I want to make it elegant, long in mouth,” says Nicola), 85% of their vines, and newer disease-resistant grapes, some made as varietals. “We want to mix classic styles with new ideas, different grapes that are hardly known” in Ticino. It requires daunting labour and organization, all the more so because they have a second company with 10 hectare of crops that include wheat and potatœs. He chose to set down roots in Valais in order to work as a grape grower and wine producer, this Geneva citizen – without having a single vine to his name. In less than 8 years Alexandre Délétraz put together a 5-hectare domain on the very steep slopes of Fully. Even better, he mastered the ability to understand and reinterpret his terroirs vintage after vintage, producing with clocklike regularity sumptuous wines such as the Cornalin Combe d’Enfer and his Petite Arvine d’Anzé, notable for its great typicity. The young pair of œnologists Marylène Bovard-Chervet, winemaker, and Louis Bovard, grape grower, have headed wine production for three years. “I love the way varietal [single grape] wines taste, and the winemaking process for them,” says Marylène, who steers clear of making blends. Oft fehle es den Schweizer Weinen an Komplexität. «Daran arbeiten wir.» Und zwar mit der Linie Terroirs, den Eliteweinen des Hauses aus streng selektionierten, separat vinifizierten Lagen. Die Aushängeschilder? «Unser trockener Traminer und der Chasselas de Fichillien.» Selbst Weinpäpstin Jancis Robinson ist der Traminer positiv aufgefallen! Christian Vessaz Terroir wines are the future. Virtually all of the vines at Cru de l’Hôpital are now cultivated by Christian Vessez using biodynamic methods. “It was considered innovative 20 years ago to diversify your grape varieties, but today it’s better to concentrate on the terroirs,” he says. Swiss wines often lack complexity: “We’re working on that.” He created a collection called “Terroirs”, with the winery’s top wines, from vine parcels where the grapes are strictly selected and the wine is vinified separately. For him, the best ones are his Chasselas de Fichilien and a dry Traminer that the grande dame of international wine, Jancis Robinson, has said is “remarkable”. Bernard Bosseau put down anchor in Dardagny 17 years ago. He’s originally from Nantes but he quickly developed into a fine Geneva wine producer, making traditional Chasselas and Gamay wines. He now offers several versions of the latter, including the renowned Révolution from old vines, matured in wood. But alongside these classics he’s developed a strong interest in sparkling wines and he makes four of these. His favourite is Bartholie Brut, a blend of Pinot Noir and the unusual Pinot Meunier, made using the traditional method. La Luis’ is a sparkling rosé wine from Gamay, with a nose of small red fruits. Ihre feinen, tiefgründigen und eleganten Rotweine tragen die Namen ihrer drei Töchter: Eléonore, Albertine und Constance. Unumgänglich ist ihre Assemblage Cuvée Cologny aus Gamaret und Cabernet Sauvignon, die allein einen Umweg lohnt! A feminine touch to the wines. Roger and Sarah Meylan have 7.5 hectares of vines and 25 hectares of crops in the heart of Cologny, a village best known for its expensive homes. Roger takes care of the crops and the vines while his daughter Sarah is in charge of making the wine and marketing it. She’s a talented œnologist and she’s created a lineup of dry whites with good typicity that includes Sauvignon, Aligoté and Gewürztraminer. Her red wines are delicate yet deep and elegant; they’ve been named after her three daughters – Eléonore, Albertine, Constance. It’s worth going out of your way if only for the blend of Gamaret and Cabernet-Sauvignon, Cuvée Cologny. Sarah Meylan Domain e d e s Châb le s, Bl onay VD Die rote Seite des Lavaux. Als sich Martial Neyroud entschloss, im Lavaux auf rote Sorten zu setzen, nahm er künftige Moden vorweg. Da das Gut seines Vaters zu klein für zwei war, pachtete er 6,5 ha dazu und bestockte sie mit mehrheitlich roten Sorten. Der energische Winzer, bereits seit zehn Jahren tätig, liebt Gamaret und Garanoir, räumt aber auch ein Faible für seinen Pinot noir Barrique und seinen 18 Monate in 700-Liter-Fässern ausgebauten Gamay ein. Schon ab dem ersten Jahr hat er auch Malbec gepflanzt, dann folgten Merlot, Mara und weitere Sorten. Passen sich diese Varietäten ans Chasselas-Land an? Absolut, «aber du darfst in den Reben keine Eile haben, du musst warten, bis deine Trauben wirklich reif sind.» Lavaux’s red side. Martial Neyroud chose to grow reds in Lavaux, looking for tomorrow’s markets. His father’s vineyard is too small for two, so he dœsn’t own any vines, but he replants the vine parcels he rents, 6.5 hectares. Reds dominate. Gamaret and Garanoir he loves, but this energetic vigneron, in business for 10 years, says he's fond, too, of his oaked Pinot Noir and Gamay, aged 18 months in 700-litre oak vats. Marco and Vincenzo Meroni, twin brothers whose vineyards – 25-plus vine parcels! – are on steep slopes where extreme weather is common, have made the many faces of Merlot their mission. “Our ancestors worked these ‘heroic’ vines and we want to keep these traditions alive.” The winery, in Biasca, is not far from the Gotthard tunnel. The powerful wines reflect the tenacity of Alpine farmers; in this case both are weekend winemakers, holding other jobs. The vines aren’t complaining, and neither are clients, who appreciate the rich range the brothers have created, of quality Merlots. “The incredible, fantastic aromas make up for our tiredness!” Fr èr e s Dutruy, Founex VD Traditionelle Qualitätsrebsorten, moderne Vinifikationen. The brothers, 4th generation producers, will have a new cellar by mid-2015, a showcase of innovative methods and technology that “respects the raw material”, says Julien, a philosophy that starts with hand-picked grapes. The “historical values” they seek mean not so much a new wine every year, an emphasis on marketing, but looking for “maximum quality that reflects our terroir, the region. Thomas und Mariann Stamm, seit kurzem von Sohn Markus unterstützt, der in Changins abgeschlossen hat, sind keine typischen Schaffhauser Winzer. Das zeigt schon ein Blick auf die endlos lange Sortenliste, auf welcher der Pinot noir nur einer unter vielen ist. «Vor allem Thomas kann sich einfach nicht beschränken, er will alles ausprobieren», seufzt Mariann lachend, ist selber aber ebenfalls neugierig auf Neues. Kein Wunder, wachsen bei Stamms viele Versuchssorten des jurassischen Rebtüftlers Valentin Blattner. Die Kunden erwarten Jahr für Jahr Neuheiten – und werden nie enttäuscht. «Wir keltern Weine, die uns selber Spass machen. Und die das auch ausdrücken.» Wines that give us pleasure. Thomas and Mariann Stamm are now working with their son Markus, who recently finished his studies at Changins. The winery is atypical in the Schaffhausen countryside – Pinot Noir is far from being the only grape grown here. “Thomas can’t stop himself – he wants to try everything,” laughs Mariann. She is equally curious and loves to discover new things. At the Stamms we find a number of experimental grape varieties from Jura researcher and nurseryman Valentin Blattner. Das zweite Markenzeichen ist die Biodynamik. «Als ich bei Marie-Thérèse Chappaz arbeitete, begann ich mich dafür zu interessieren», erzählt die Winzerin. Längst sieht man auf dem Gut keine «Gift-Schutzanzüge» mehr, seit vier Jahren sind die Weine zertifiziert. «Eigentlich machen wir das in erster Linie für uns. Und die Kunden finden die Weine lebendiger, tiefgründiger, interessanter…» Bio (dynamic) winery near the Rhine falls. FA M I L I E | FA M I LY 39 Weing ut Wol fer, Weinfel den T G Höchst stilvolle Rot- und Weissweine. «Wir legen grössten Wert auf gesundes, extraktreiches Traubengut», betont Martin Wolfer, «dann können wir im Keller ganz schonend arbeiten.» Der junge Weintechnologe, der nach diversen Stages, etwa in Tasmanien, das Gut 2012 übernommen hat, bezeichnet den Pinot noir als seine wichtigste Sorte. «Mein Favorit ist der barriquegereifte Pinot noir Grand Vin.» Kein Wunder, denn mit den Jahrgängen 2009, 2010 und 2011 wurde er beim Mondial des Pinots zum Pinot-Weltmeister erkoren. Bestechend aber auch seine Weissweine, die durch Finesse, Eleganz und strahlende Frische überzeugen. Gespannt sein darf man auf den geplanten Chardonnay nach Burgunder Vorbild. Martin Wolfer Stylish reds and whites. “We insist on grapes that are rich and healthy,” says Martin Wolfer, “because this way we can work very carefully in the cellar.” The young wine producer took over the domain in 2012 after training in Tasmania. His favourite grape is Pinot Noir, which is also the most-planted at the winery. “My favourite wine is the oaked Pinot Noir Grand Vin.” Thanks to the vintages 2009, 2010 and 2011 he was named Pinot Noir World Champion at the Mondial des Pinots, for three consecutive vintages of top quality wines. His white wines are also impressive: delicate, elegant and fresh. We’re waiting impatiently to try his new Chardonnay, made along the lines of a Burgundy white. Seine Petite Arvine, bereits einmal Gewinnerin beim Grand Prix du Vin Suisse, ist trocken, voller Spannung und sortentypisch, mit ihren Noten von Grapefruit und Limetten. Seine Humagne rouge war Siegerin bei der Selektion der Walliser Weine, sein Pinot noir hat beim Mondial des Pinots 2014 eine Goldmedaille gewonnen. Kurz: Seine Weine gleichen ihm nicht nur, sie wissen auch zu gefallen! Christophe Rey 40 Wines that resemble the man. It’s startling to see how some œnologists create wines that reflect their own personality traits. This is the case with Christophe Rey whose wines are precise and elegant, without any unnecessary flourishes. He dœsn’t care for superfluous discussions. His Petite Arvine, a Grand Prix du Vin Suisse winner, is dry, nervy, and true to its grape variety, with grapefruit and lime notes. His Humagne Rouge was the top wine at the Sélection des Vins du Valais and his Pinot Noir won gold at the Mondial des Pinots 2014. In short, his wines not only resemble him, but they, too, are pleasing. Fratelli C o rti , B al erna TI Weine von hier, bitte! Nicola Corti ist ein ruhiger, zurückhaltender Mann, allerdings nicht, wenn es um seine Weine geht. «Wenn ich gute Weine habe, dann muss ich sie fördern. Wir sind zwar in dieser Hinsicht nicht hyperaktiv, aber ich habe immer ein, zwei Weine, die gut abschneiden in nationalen Wettbewerben. Es ist eine Realität, dass Weine aus dem südlichen Tessin gefallen – sie sind sehr trinkfreundlich und rund. Zudem haben wir eine gute Auswahl. Das ist unsere Tradition und nicht nur meine Ansicht, da haben wir echt Glück.» Schwierig dagegen: «Man glaubt, jeder wisse, wie gut sie sind, doch das stimmt nicht!» Das merkt man dann, wenn sich ein Talent im Weinverkauf dazu gesellt, Teil einer langen Familiengeschichte. Wines from here please. Nicola Corti is quiet, almost to the point of being self-effacing, but not so for his wines. “When I see good wines I promote them! We’re not hyperactive about it but I always have 1 or 2 wines that do well in national competitions. The reality is that wines from southern Ticino please – they’re very pleasant to drink, round – and we have a good choice. That’s our tradition, it’s not just my thinking, and there, we’re lucky.” The hard part is that “you have this idea that everyone knows how good they are, but it’s not true!” That’s when a talent for selling wine steps in, part of a long family history. Nicola Corti Vin i Rov i o Ro n c o, Rovio TI Der persönliche Kontakt zählt. Gianfranco Chiesa ist liebenswürdig und zurückhaltend – ein Winzer mit Talent und der Gabe, Freunde zu gewinnen (und zu behalten). Gianfranco war lange Amateurfussballer. «Ich mache viel Sport, bin aber auch als Sportler eher diskret; ich denke, das schätzen die Leute. Ich kenne viele Leute dank dem Sport.» Er liefert seine Weine in der ganzen Schweiz aus, oft an langjährige, treue Kunden, die ihm kostbares Feedback geben. «Diese Zeit darf man nicht zählen.» Personal contact is what counts. Gianfranco Chiesa is gentle, soft-spoken – a wine producer of great talent with a knack for making and keeping friends. His wines include the stunning Rovio Riserva Merlot, from vines perched above Lake Lugano. “I prefer to let the wines speak,” to being in the spotlight, but part of Rovio’s success is down to building personal contacts. He has long played amateur football. “I do a lot of sport and I have the same profile; I think people appreciate it. I know a lot of people through that.” He handdelivers his wines around Switzerland, often to clients of many years. Seine Terroirs kennt er in- und auswendig, seine Familie betreibt seit 1600 Weinbau in Dardagny! Präzis und sorgfältig kultiviert er mit grossem Fingerspitzengefühl neu angepflanzte Sorten wie die Petite Arvine und diversifiziert gleichzeitig seine Vinifikation: Gamaret und Muscat werden trocken und süss gekeltert, während der Syrah dieses Jahr voll und ganz in Barriques vinifiziert wird. Doma ine Del a h a rp e, B urs ins VD Notwendiger Wechsel, getrieben von Neugierde. Als Yann Menthonnex 2000 den Betrieb übernahm, war Bursins ein Land des Chasselas. Sein Vater und Grossvater betrieben Reb- und Ackerbau. Yann war der erste, der selber vinifizierte. In 15 Jahren vergrösserte er das Gut von vier auf acht Hektaren und pflanzte fleissig neue Varietäten: Heute kultiviert er ein Dutzend, und auf seiner wachsenden Weinliste findet man, als Reminiszenz an einen Trip ins Baskenland, auch einen Charmeur mit spanischem Einfluss. «Ein Wechsel war nötig», doch neue Rebsorten, spannende Weine und Erfolg gehen auf das Konto seiner eigenen Neugierde. Jetzt heisst die Herausforderung Marketing: «Man muss auf sich aufmerksam machen.» Karine & Yann Menthonnex 42 Change necessary, but curiosity drives. Yann Menthonnex took over from his father in 2000, when Bursins was the land of Chasselas. His grandfather and father developed vines and farmed crops. Yann was the first to make wine, in 2000. In 15 years Delaharpe has grown from 4 to 8 hectares and he has busily planted new varieties: today he has 12 and his growing wine list includes a charmer with a Spanish influence, after a trip to Basque country. “Change was a necessity,” but the new varieties, interesting wines and success are driven by his own great curiosity. Now the challenge is a marketing one: “You have to be seen to be known.” Cave d e s Rem p arts, S a il l on VS Der Weinhandwerker, ein Gesicht und ein Herz hinter jedem Wein. Each of the 10 grape varieties grown on his 3 hectares are given made-to-measure care to bring out their best. The Muscat is chewy, the Malvoisie made from withered grapes is voluptuously rewarding and the Cornalin is fruity and spicy. Each bottle is a voyage! Annatina Pelizzatti, die schon als Kind in den Reben mithalf, wollte eigentlich nicht Winzerin werden. Doch das Schicksal hatte anderes mit ihr vor. Seit 1997 leitet sie den Familienbetrieb mit 3 Hektaren Reben in Jenins und Malans. Längst gehören ihre gradlinigen, eleganten, burgundisch anmutenden Pinot noirs zum Besten, was in der Bündner Herrschaft produziert wird. Am wohlsten fühlt sie sich in den Reben, das Reden überlässt sie gern ihren Weinen. «Ich will Weine mit Persönlichkeit, mit Ecken und Kanten, die ihren Jahrgang repräsentieren, keine manipulierten Mainstream-Weine», sagt sie überzeugt. «Möglichst wenig eingreifen, das ist meine Devise!» Guided, but wines that speak. Annatina Pelizzatti has worked in the vines since she was very young, but she never wanted winemaking to be her life’s work. Destiny changed that, and since 1997 she has overseen the 3-hectare family winery that is in Jenins and Malans. Her Pinot Noirs are straight, elegant and made in a Burgundy style; they have long been among the best produced in canton Graubünden. She is most at home in the vines, and prefers to let her wines “speak for themselves”. Seit die Chervets 2011 ihr zweites Weingut im Languedoc verkauft haben, «habe ich endlich Zeit, all meine Ideen hier umzusetzen.» Das Schwergewicht liegt auf Weissweinen von grosser Finesse und Eleganz, Weinen, die etwas zum Schwingen bringen. Der Chasselas ist mit 35% der Produktion die Hauptsorte, weitere Stars im Sortiment sind aromatische Varietäten wie Traminer, Freiburger oder Sauvignon blanc, die Jean-Daniel Chervet mit viel Fingerspitzengefühl zu subtilen Weinen voller Rasse verarbeitet. Ein absolutes Muss für Weissweinfans! Franziska & Jean-Daniel Chervet 2014 Chasselas World Champion. “We were really surprised to win the title – the whole region was happy for us,” says the ever-modest Jean-Daniel Chervet. The family sold its second winery, in Languedoc, in 2011, and since then they have focused on creating white wines of great elegance and delicacy, wines that are talked about. “I have more time now to explore my ideas,” says the producer. Chasselas is the main grape, 35% of production. Other stars here are made from aromatic grapes that include Traminer, Freiburger and Sauvignon Blanc, which Jean-Daniel Chervet handles with a sensitive touch to create wines that are spicy yet subtle. A winery well worth a visit! Cave de s C ote a ux, Boudry N E Kreativ und neugierig. Seit 1998 ist Janine Schær als Kellermeisterin verantwortlich für die drei Weinlinien der Winzergenossenschaft von Boudry. Die Caves des Coteaux verarbeiten die Ernte von rund 50 ha, geliefert von rund 60 Winzern. «Wir sind eine Superequipe und sehr motiviert.» Jahr für Jahr macht Janine Schær neue Vinifikationsversuche und pröbelt mit neuen Sorten – oder mit alten, etwa mit der weissen Varietät Petit Meslier aus der Champagne. Auch alte Methoden werden wiederentdeckt. «So etwa das Stösseln von Hand in offenen Gärstanden für den traditionellen Pinot noir.» Das Sortiment umfasst neben beliebten Klassikern entsprechend auch zahlreiche Spezialitäten und Assemblagen. Janine Schær 44 Creative and curious. Janine Schær has been in charge of the three collections of wines at the Boudry cooperative since 1998. The Cave des Coteaux handles the harvest from about 50 hectares, supplied by some 60 growers. “We have a super team, very motivated.” Janine Schær experiments with new grape varieties and tries new vinification techniques every year – sometimes it is older grape varieties that carry the day, like the white Petit Meslier that comes from Champagne. Even older vinification methods are sometimes adapted for today. “The pigeage for our classic Pinot Noir is done by hand in open vats.” The collections include popular classics as well as a number of blends and specialty wines. Es ist nicht nur das Terroir, das zählt.» Schweizer Weine sollen für ihre Qualität bekannt werden, doch das verlangt nach Marketing. «Wir können nicht mehr einfach auf die Kunden warten, wir müssen hinaus», um die Weine vorzustellen, Feedback zu bekommen, in den Export zu investieren, wenn auch nur in kleinen Mengen. Teamwork is key. Ask Frédéric Blanc about the family winery’s success after only 25 years, and his awards. He’s quick to say, “Teamwork. I’m lucky to have a great team – keen, young, energetic. We’re always looking for a way to go further.” Yvorne is famous for its fine Chasselas terroir, but “everywhere in the world where you have great wines there are also minor ones. It’s not just terroir that counts.” He wants to see Swiss wines known for their quality, which demands marketing. “We can no longer just wait for consumers; we have to go out to wine salons,” present wines, get feedback, start exporting even if in a small way. Frédéric Blanc Domain e Vi llar d & F i ls, Anièr e s GE Eine Ode an die Finesse. Philippe Villard liebt Trauben, sämtliche Trauben. Als Rebschulist produziert er all seine Rebstöcke selber. Den Geschmack der Trauben will er in seinen Weinen wiederfinden, deshalb vinifiziert er fast ausschliesslich reinsortige, sortentypische Crus voller Finesse und Eleganz. Unbedingt probieren sollte man seinen ausladenden, rassigen Savagnin blanc oder seinen trockenen Muscat mit explosiven Traubenaromen. Bei den Roten verdient der im Holz gereifte Gamaret Les Raretés eine besondere Erwähnung; er ist fruchtig und von feiner Würze. Wenn Sie ihn besuchen, dann gibt Philippe Villard Ihnen auch seine Hausspezialität zum Verkosten: seinen Ziegenkäse! Ode to delicacy. Philippe Villard likes grapes – all grapes. He’s a nursery man who produces all his own grapevines. He loves to find the taste of the grapes in his bottles and he makes wine almost exclusively from single grapes with good typicity, wines that are always remarkable for their delicacy and elegance. Two of his top wines are a generous, classy Savagnin Blanc and his dry Muscat with explosive grape aromas.
