This is delicious unfiltered sake! Slightly cloudy with a delicate sour yet sweet nose.
A mineral palate with hints of pear and brown sugar. Soft and textural with a great acidity and a
dry finish.

Umajun means delicious. This sake has a complex aroma with hints of vanilla & crushed nuts,
the palate is creamy with a citrus crispness to the finish. Great with deep fried or salty dishes
This is made using a regional rice called Dewa Sansan, it produces a soft and deep
flavoured style with good zingy acidity and a clean fresh finish. Great with our fried food
Manma means “the same state or condition” in other words this sake is kept in the same
condition as it came out of the press. Fruit sweetness up front with nutty savoury finish
Complex smokey cherry, vanilla & pickle aroma with a unique savoury yet fruity palate.

(S) Sustainable - otherwise known as Lutte Raisonnee in french (the
reasoned struggle) is a farming practice whereby farmers first and
foremost will use all methods possible to save crops before
using chemical treatments, most often excellent producers who farm in
marginal areas that have high disease pressure.
(O) Organic - Organic farming is the growing of grapes without the use
of synthetic chemical sprays.
(B) Biodynamic - Biodynamic viticulture builds on organic viticulture,
it is philosophy based combining the maintenance of sustainable soil
fertility and the recognition of the link between plant growth and the
rhythms of the cosmos.
Biodynamics relies on a series of preparations based in mineral, plant
and animal substances rather than the traditional potentially toxic
chemicals and sprays.
(N) Natural - Natural wines refer to a wine making philosophy that
builds on organic or biodynamic farming practices. Wines are made
without additions of any kind (other than small amounts of SO2 in some
cases) and yeasts are wild rather than commercially made. In most
cases the wine makers will endeavour to use grapes grown in an
organic/biodynamic method however on occasion in Australia some
wine makers will use grapes grown in a sustainable or conventional
way and still choose to call there wines natural as a stylistic term. I have
chosen to list these by the farming methods rather than their approach
to wine making.
